"My personal view is you need 3 or 4 days to really appreciate this lovely hilltop town. You can take a day trip and do several of the highlights: The Duomo, The Well etc as they are relatively close by. But to enjoy wandering the medieval streets, finding the stunning views or hiking around the base of the towns rock formations then its much better to spend a few days really getting to know the place. Unfortunately as a vegetarian I would say the options are a little bit lacking. Try different bars/cafes for coffee and cakes as prices to vary."
