Being in Timaru, you ought to do the Mt Nimrod track. Not the most scenic but it is nice, even has a waterfall. As someone else has suggested, you're not too far from Mt Sunday and the Hakatere conservation reserve. The view up the Rangitata from Mt Sunday is something else.
