Can someone explain Hatch chiles to me.

I read earlier to day that they are a [specific variety](https://www.reddit.com/r/SalsaSnobs/comments/1euts1z/comment/lin77it/) but that doesn;t seem correct. When I look I find numerous "hatch" peppers - like Big Jim, Guizeppi, Barkers hot etc. Are Hatch peppers just peppers…

"This place was pretty cool. The best part was the woman working there who taught us alot about the different kinds of chiles. She was so sweet and even got my picky daughter to sample some hot sauce. The gift shop was 1 small room, but there was a lot of different things to purchase. We ended up getting some pistachio brittle and a packet of chile seeds to grow at home."

Donna Miller

"I came to the new location at the Fabian Garcia Research Center, it is open Monday-Friday 9-4. They feature over 100 different seeds such as, ornamental chile seeds, classic New Mexico varieties of chile seeds and many other different kinds. They offer free samples of most of their sauces, which are very tasty. The store also features New Mexico themed items, such as, dish towels, wax melts, wind chimes, jewelry, jerky, stickers, and much more! I was told they also have a teaching garden open July through October, with tours available. Overall great experience, I will be coming back!"
