From what I've been reading online, Titusville is the best place to go (other then paying for Kennedy Space Center tickets which I don't want to do). Sounds like Space View Park or Jetty Park are the best views. What would you guys recommend? The websites for both of those…

What Travellers Say
Reviews Summary
Visitors praise the Veterans Memorial Fishing Pier for its peaceful atmosphere, opportunities to see dolphins and manatees, and its role as a veteran's memorial. It's a great spot for casual fishing and family outings, though some find navigation to the pier tricky and note the lack of on-site bait shops. The potential for rocket launch views adds a unique draw.
"This is a great place to fish. Gets a bit crowded, but seeing manatees and dolphins do help ease the day. Open 24 hours to fish. Right in the thick of the Intracoastal. Google maps will have you miss turn, so be aware, although it out on the water under the bridge, 1/4 into going over bridge, you really can't get there. So at the west side ( land side not beach side ) take the turn into the park and the first right.
You'll have to gear up before coming. No bait or tackle here. I do recommend Captain Hooks for that.
Bring glove(s) , as there are a bunch of puffer fish if that's even the correct name.
I think coming here to fish for a rocket launch would be great. But im sure 1,000s have thought of that already. Even if it's a bad spot, there are many alternate places very near that you can try."

"I really like the fact that veterans are honored here with a beautiful park. A good view for space launchers. All sorts of neat history. Very nice men's room...flags, and very long piers for all fishing fanatics. I am very happy my mother and step father brought me to this wonderful stop."

"Great local spot to fish with the kids. The water isn’t too deep in most parts. Has cool little islands. The fishing was good enough for the kids to learn and relax."
