Penfolds Grange is arguably the most revered wine in Australia, but in 1957, the company board told winemaker Max Schubert not to continue his attempts to make an ageable Bordeaux-style wine. But Schubert kept going in secret, storing it in a secret cave in the tunnels beneath Penfolds Magill Estate. The now not-so-secret cave is the highlight of the historical tour at the Magill Estate, but there’s a three-course lunch and structured tasting too.

An 18-month makeover of the restaurant interior and kitchen issued a powerful statement of intent; corporate owner Treasury Wine Estates made good its promise to revive Penfolds Magill Estate restaurant as one the nation’s leading dining rooms. Combining an Allen Jack + Cottier building with an interior refit by Pascale Gomes-McNabb, the luxe look is realised with bespoke blackwood tables and dramatic sculptural lights offsetting idyllic views across vineyards to distant gulf waters. Chefs Scott Huggins and Emma McCaskill lead an outstanding team that cleverly presents plates of understated elegance with delicious harmony and poise, from snacks of puffed tendon topped with fish roe, to intricately scored calamari with almond and artichoke, and a bewitching dessert of artichoke, apple and honey.

Dining at this level is all about memorable moments and the cooking here from long-time chef and now owner Scott Huggins certainly offers plenty, with fingers used almost as often as forks. A sandwich of barbecued porcini and a frizz of fried leek between discs of brioche seems equal parts bread and (truffle) butter, while a next-level seafood medley of lobster meat, abalone and burnt tomato is served with roti to swipe through the ambrosial juices. A perfectly pink lamb cutlet is wrapped Wellington-style with prosciutto, mushroom duxelles and puff pastry that would ideally have cooked through a few minutes longer.To finish, a block of rice pudding adorned with poached pear, honeycomb, raisin puree and flakes of milk skin is comfort food of a rare calibre.

What I love about Penfolds apart from of course the wine is the modern looking restaurant that has sweeping views over its vineyard.
