Chef Sean Ford holds fast to traditional values, growing many of his vegetables and offering uncomplicated but delicious classic bistro fare. A perennial is his chestnut fettuccine with rabbit ragu while a seasonal dish is barramundi topped with caponata, making the most of summer eggplants cooked with celery, pine nuts, raisins and sharpened with vinegar. Ox and Hound is a warm, hospitable place with woven cane chairs at hardwood tables and a view out over the main street.

Located in the charming town of Beechworth, the Ox and Hound Bistro offers a dining experience like no other, with a focus on rustic French and Italian cuisine. If only every country town had a classic bistro like this one. Occupying a classic heritage shopfront with enormous windows and a pressed-metal ceiling, touches like wicker chairs, French posters and branch chandeliers complete its charming look. The menu leans towards French- and Italian-inspired dishes that rely on seasonal local produce, while the wine list features a beautifully curated collection of local Beechworth wines.

**Chef and owner Sean Ford is fuelled by an obsession with rustic French and Italian cooking, expect a menu stacked with comforting bistro classics: chicken liver parfait, goat cheese souffle, fettuccine with wild rabbit and the signature honey pannacotta. Foraged foods and home-grown produce abound – we grow varieties of carefully selected heirloom vegetables and fruit exclusively for the restaurant.

There’s a choice of fine dining including once hatted restaurant the Provenance (book well ahead) or just superb al la carte at Ox & Hound or go for possibly the best pizzas outside of Italy at the Bridge Road brewery along with the lively atmosphere at this very popular local (don’t forget to sample the large range of locally brewed award winning beers).

The pressed metal ceiling and embossed tiles might shout French bistro, but the rustic wattle branch chandelier reveals where chef and owner Sean Ford’s heart really lies. Ox and Hound brings French and Italian dishes to life using fresh regional products, with a seasonal backed by nearly 70 wines that hail from across Europe’s best wine regions.

Ox and Hound’s Sean Ford is the type of chef who cares deeply about where his food comes from, going as far as growing a lot of his veg himself. Together with partner and front-of-house manager Lauren Heidke, they tend a two thirds of an acre block from which they grow fragrant summer veg and winter greens.

The Ox and Hound Bistro Beechworth is a must visit for anyone in the area. With a cosy and rustic atmosphere, knowledgeable staff, and well crafted menu, this restaurant is sure to impress. The large selection of local and imported wines allows for the perfect pairing with any dish.

If we could have ducked out sans children, we would have loved to have a drink at either the Press Room Wine Bar or Eldorado Road Wine Bar or enjoyed a long lunch at the two chef hatted Provenance or The Ox and Hound. Hopefully next time or on another weekend with the girls.

The last of our dinners in Beechworth was at The Ox and Hound Bistro. This was another must-book given it only has 12 tables, and I’m very glad we did. For entree I went with the Goats Cheese Soufflé ($19) which was served with an apple, celery and walnut salad.

Come here for country-sized portions of modern bistro food, perfectly cooked. The duck breast is just rare, the scallops served with prawn and spring vegetables delicately translucent in the centre. A compact but appealing wine list highlights Beechworth wines.

In the center of town is where you’ll find the Ox and Hound which is a town hotspot with a clean and country chic interior. It’s in a storefront along the main strip between the historic buildings and boutique shoppes that make Beechworth worthy of your visit.

The signature wattle branch chandeliers bathe a beautifully simple dining room with golden light. Woven cane bistro chairs, a pressed metal ceiling, fine wine glasses and cloth napery welcome diners to what is a cosy dining space seating just 30 guests.

It’s as if you had stumbled across a quaint village restaurant on the outskirts of Bordeaux. There’s an artillery of exotic wines on their list, predominantly hailing from Europe, which pairs well with the authentic French flavours.

If you’re after a nice dinner out, then this is a great option, but you do need to book in advance.
