Guided by Santini’s Culinary Creative Lead Chef Nic Wood and Dan Gedge from Leeuwin Estate, the five courses will immerse you in the earthy flavours of the local delicacy, with dishes including buckwheat waffle with smoked cheddar, date and truffle, cavatelli with chicken skin, hazelnut and truffle, plus succulent roast pork loin with truffle. The 350g New York sirloin on the grill is a well-priced $39.00, featuring pasture-fed 45 day dry aged Cape Grim steak with parmesan polenta crumbed onion rings for a satisfying crunch in between bites of that buttery soft meat.

Executive Chef Ramon van de Griendt runs a kitchen that jumbles Italian classics with New York-style grill standards and throws in a fair smattering of finesse.

A well put together list that focuses on big names and iconic Australian producers. There is some value to be found in the smaller, lesser-known categories, although the business crowd is well catered for with a generous smattering of labels for celebrating success. The dining room is vibrant and good looking, the food comforting and reliable.

Hidden behind an emerald-hued floor to ceiling curtain, Santini's semi-private dining room feels kinda like stepping inside an artist's mind, with bright geometric details and vibrant jewel tones everywhere you look. The lavish decor pairs perfectly with their glorious upmarket Italian menu that'll leave your group grinning from ear to ear.
