"Made a reservation for the omakase which is located in a private room at the entrance to Nobu. The course included about ten pieces of sushi, a beautifully arranged plate of sashimi representing the current seasonality, and several other dishes. All the seafood used in the omakase were very fresh and was especially noticeable when tasting the sashimi. The Kagoshima wagyu was perfectly cooked, very tender and marbled with no gristle at all. Each piece of nigiri sushi was delicious and satisfying; some of the highlights includes the squid which was texturally unique to the bite due to how it was cut, the fatty kamatoro tuna which comes in only a small quantity from the collar, the fresh and smooth Hokkaido sea urchin, the soft and sweet pearl meat which is said to be superior to scallop, and the fluffy sea eel drizzled with chef Yoshii's 32 years old concentrated sweet soy sauce. The egg omelette was also very unique and tasty; the top and bottom layer has a sponge cake texture and the centre was like a creamy scramble egg which is barely holding it's shape. Overall it was a great dining experience, food wise as well as the friendly and attentive service from the staff as well as the chef's interactions with every customer."
