Excelling as both a standalone cocktail bar and Asian-French fusion restaurant, Pidgin deftly gathers together French culinary techniques, Asian flavours and the seasonal bounty of the Pacific Northwest to create something entirely new and so very Vancouver-ish. Cocktails are thrillingly innovative, using ingredients such as matcha tea, smoked maple syrup and toasted rice rum. Look out for the fun and quirky installation pieces, such as local artist Ricky Alvarez’s gleaming cleaver behind the bar and the claw handles for the on-tap sake.

Pidgin may be known for their deceptively simple East-meets-West Asian-inspired menu with a decidedly French edge, but their cocktails are all kinds of fantastic too, and in a casual but cool spot like this, it’s most fun to combine the two. Try their addictive chicken wings finished with a gochujang-based BBQ sauce with a bourbon-based Van Horne, and the plate-lickingly wonderful smoked taramasalata with an onsen egg with their much-loved carbonated sake and gin-based Mary Ellen Smith.

Weaving Asian ingredients with those native to the Pacific Northwest, Pidgin pays homage to the various cultures that make up the city. Meant for sharing, executive chef Wesley Young’s plates include udon vongole with manila clams, guanciale, shiso, lemon zest and furikake; Korean rice cake with gochujang Bolognese and spiced hazelnut; and duck breast with hoisin sauce, scallion pancake and snap peas.

Last year, chef Angus An’s Maenam was declared champion; this year he and his team will compete against 16 challengers, including AnnaLena, Cibo Trattoria, Pidgin, Tableau Bar Bistro, and Wildebeest. While only one eatery will be declared the victor, every attendee walks (or wobbles) away a winner—your admission ticket, in the form of a Dumpling Passport, allows you to sample from each participating restaurant’s station. (Fullest of all will be the competitors in two eating contests, for which eight men and eight women frenziedly try to consume the most dumplings in two minutes. If you were to take a bit from the East and a little from the West, you'd get Gastown's PiDGiN. This blend comes from having worked and travelled throughout various continents and the dishes are a reflection of that. On the menu you'll find dishes like grilled octopus with an eggplant puree, merguez oil and feta coexisting with a pork belly rice bowl that's accompanied by asian pear kimchi, bamboo and quail egg. While it can be a challenge to pull off different dishes, PiDGiN nails it.

Seafood-focused spots like Blue Water Café, Coast and Wild Tale Coastal Grill are all quick to celebrate spot prawns in season, but even non-seafood restaurants like Pidgin get in on the action. For a Japanese take on the delicacy, head to Tojo’s, Raw Bar at the Fairmont Pacific Rim, and Miku. These will also be good choices for finding line-caught halibut and wild salmon while in season.

Gastown’s Pidgin takes fried chicken wings to a whole other level. Not only are they wonderfully crisp and juicy, but they are also drizzled in a delicious Bibimbap-inspired sauce. Topped with some fresh green onion slivers, Pidgin’s fried chicken wings are a great snack to begin your meal with or to order along with a bunch of other equally tempting plates.

This Downtown Eastside establishment may be known for its larger pork belly rice bowl and spiced lamb belly dishes, but its smaller plates are a fine start to the evening. If you’re a fan of anchovies pair them with rice crackers or opt for the daily pickles. The flavour combinations – always unique – are intricate without being needlessly complicated.

There are several restaurants, like PiDGin, that contribute to Vancouver’s reputation as a culinary mecca. Pidgin’s wings are just one of this reasons this restaurant has been making such a storm since it opened two years ago.

We already mentioned PiDGiN for their food, but their cocktail menu is pretty spectacular too. For instance, right now they are serving up the One Eyed Samurai (watermelon infused tequila, sake, lemon, egg white, orange blossom, and watermelon granite). They also have a cocktail tasting flight.

In the video we dined at DiBeppe Italian restaurant and there are plenty more to try like L’Abbatoir and Pidgin as the neighbourhood’s most popular and famed dining spots. For something more fun and lighthearted we suggest Greta, an arcade, kitchen and bar rolled into one.
