As a return on investment, they send compost back to Rootdown for integration with the soil. (Alta Bistro is also known for its addictive elk tartare, made with local game and cocoa.) Any night of the week, you can see regulars in the intimate, art-filled dining room, sipping cocktails featuring Pemberton Distillery spirits.

Stop by Alta Bistro this spring for its three-course savoury menu, available for $49 between Tuesday and Sunday, aside from Saturday nights when the prix-fixe option will run diners $59. A twist on the classic French 75, I think this one actually elevates the original recipe with some nice additions. Utilizing local BC Odd Society’s Vodka, lavender, fresh lemon and cracked pepper, this drink is served neat, topped with bubbles and Alta micro herbs. It also happens to be a very cozy place to grab a seat at the bar and sip slowly.

Alta Bistro is also the first in Whistler to use the premium Enomatic wine-serving system. It protects the wine from oxidation so that every glass is as good as the first.
