Owned by swanky chocolatiers Hotel Chocolat, this series of eco-lodges are built into a verdant cocoa estate, where you can learn to make chocolate bars from raw cacao between sunbathing sessions. Delicious eco design channels the island’s natural resources from rooms to treetop-level infinity pool. Slightly inland from the Piton peaks, you’re close to outdoorsy activities and sights, as well as ravishing beaches, but you’ll need a car or a local driver to get around.

Anyone who loves chocolate will love this themed adults-only boutique hotel just south of Soufrière and within shouting distance of the Pitons. Two successful British chocolatiers decided to come to the source and built this upscale eco-friendly hotel on a historic (1745) 140-acre cocoa estate that continues as a working plantation. The half-dozen one-bedroom lodges and 19 "luxe" lodges, which are nearly twice as large, have unobstructed Piton views.

Hotel Chocolat – the chain of UK chocolate shops – owns the historic, cocoa-producing Rabot Estate in south-western St Lucia. You can sign up for a Tree to Bean tour at the estate's nurseries, where you get involved in the delicate grafting process which produces the desired Trinitario cocoa bean, and/or you can book the Bean to Bar experience, turning cocoa nibs into a bar of chocolate (surprisingly hard work).

😛 On our third day in St Lucia, we started the morning by grafting a cocoa plant, learning about the harvesting process of cocoa pods, and touring the lush plantation owned by British chocolatier brand, Hotel Chocolat. The highlight of the morning was making chocolate by arduously grinding cocoa nibs with a stone mortar and pestle, sifting sugar and stirring cocoa butter into the thick paste, and allowing it to set in a small plastic mould to take home later. The tour cost almost USD $120pp, and came with lunch with an American slant — e.g., a choice of fish and chips, burgers, or wings with a side of mash, plantain chips or salad, and an epilogue of slightly bitter, cocoa soft serve ice cream.

The world may know it as a fine chocolate brand, but when you combine Hotel Chocolat’s knowledge of cocoa with great hospitality and an island that produces some of the world’s best chocolate, you’re onto a winner. Rabot Hotel sits on a historic cocoa plantation and the entire hotel has subtle nods to both the bean and the bar. The stylish rooms are minimalist but comfortable, pairing white walls and bedding with deep mahogany four-posters and floorboards, plus private bathrooms and Piton views.

Themed hotels often struggle to win over the discerning traveller, although Rabot Hotel from Hotel Chocolat appears to be an exception. Interiors have pinched all the adjectives associated with chocolate (to a non-gimmicky end) and remoulded them into dark brown-hued cocoons. A vast infinity pool, lined in black quartz, recalls molten chocolate, particularly at dusk, while spa therapists lather on delicious cocoa-infused products for deep tissue massages and facials.

Nestled among the cacao groves of their organic Rabot Estate, looking out over the Piton Mountains, you’ll find Hotel Chocolat’s hotel and restaurant. Situated 1,000 feet above the Caribbean Sea, the restaurant serves innovative cacao cuisine, which uses the bean as a subtle spice and a delicate infusion as well as the rich, deep heart of desserts. Pineapple and callaloo topped with granola, roasted coconut, almond, watermelon, banana.

Taking its brand name literally, this is the hotel edition of the luxury chocolate and a place where chocoholics can find true happiness. The six-acre Rabot Estate in St Lucia overlooks the Pitons. Guests can attend Project Chocolat, an agricultural-tourism experience that will teach them how cacao grows and take them on a tour of the rainforest groves, before a lesson in crafting their own chocolate bar.
