Reviews Summary

La Calma by Fredes is celebrated for its exceptionally fresh and exquisite seafood, with many diners hailing it as among the best they've ever experienced. The La Calma Platter and unique dishes like stewed conger eel are standout favorites. While the food garners high praise, a few reviews mention inconsistencies in service and high prices.

"One of the best seafood places I have been to - ever !

The La Calma Platter was absolutely fantastic ! The seafood was so fresh and delicious. Generous sashimi and scallops as well as various shells ... Paired with a great Chileanean 🇨🇱 red wine 🍷 dinner was perfect.

To finish the seafood evening we had the Oyster Platter.

The evening was perfect and the waiters were very attentive. Overall, a wonderful dining experience!"

"The food was amazing:

The octopus was cooked and seasoned well and the ceviche was great.

My favorite was the stewed conger eel; it was perfectly cooked (a bit caramelized and finished in a mirepoix stew that complemented the fish perfectly).

The squid ink fideoes were fantastic.

The service was slightly below average, but the food was so good I would certainly come back time and time again."

William Zheng

"Amazing experience at La Calma by Fredes! The service was top-notch. The food was fresh and exquisite. The octopus was one of the best I’ve had and the king crab pasta to die for. Our server also recommended the panna cotta for dessert, it tasted like a Christmas morning and not sweet at all. Definitely recommend if you’re visiting Santiago"

Where to Eat in Santiago, According to Locals Who Know Good Food

At La Calma, the seafood doesn’t just taste fresh, it tastes like it was pulled from the ocean that morning and handed to you on a plate. The focus here is ultra-fresh, traceable delicacies from the sea, caught by small-scale fishermen and divers, and served simply so the ingredients can speak for themselves. Order the Plato La Calma, a greatest-hits lineup of the day’s catch—scallops, oysters, razor clams, picoroco, sea urchin, and piure (which I once wrote about for Vice in an article my editor titled “This Terrifying Sea Creature Is the World’s Only Delicacy That Can Literally Fuck Itself”).

Must order:** Plato La Calma (pictured above)Sublime seafood caught from Chile’s extensive Pacific coast awaits at La Calma, and the selection is so bountiful, it’s possible you might sample a local gastropod mollusc for the first time. Chef Ignacio Ovalle creates a diverse Pacific portfolio best enjoyed on the roofed outdoor patio: start with a half-dozen chilensis oysters paired with a zingy Sauvignon Blanc. Then, savour the eponymous Plato platter, whose delicacies include octopus, scallops, algae, limpets and trumulco sea snail, among others.
