The first, at the legendary Bar Liguria, where a busy lunch hour was punctuated by a bald man jovially playing old standards on a piano. We sat up front, in the bar, loaded with bric-a-brac and ephemera from old Chile, and ordered two classics: a cazuela, brimming with slowly-braised beef, root vegetables, squash and a fiery banana pepper:

Don't be surprised if one of the three Liguria locations is the first place your Santiago friends take you. It was more than a decade ago when I walked into Bar Liguria for the first time. It was the first restaurant I’d experienced in Santiago. I’ve been to Liguria in each location many times since, including the new location in Barrio Lastarria.
