Wing Lei

The crystal dragon on the dining room wall says everything about Wing Lei’s ambition and excellence. Its culinary offerings feature seasonal produce prepared by skilled hands. For instance, the Barbecued Iberico Pork with Maple Syrup is tender with subtle fruity notes, a result of the lychee wood used in roasting.

A Michelin star–spangled Chinese restaurant inside the Wynn Macau, Wing Lei dazzles with rich mustard decor and an enormous Swarovski-crystal dragon sculpture flying overhead. The chef mixes up the menu with each changing season and reservations are recommended.

It would of course be wrong to visit Macau without indulging in some local Cantonese Cuisine, and with my cravings for steak out of the way, I make a visit to Wing Lei, which would be my first proper Michelin Star (1 star) dining experience at Wynn (not counting my quick bite at Mizumi). So Wing Lei is just a rather majestic restaurant, dressed in gold and red, which are a common theme in Wynn and Macau, given these are revered colours in China. The menu was then a mix of seafood and meat, a fancy surf and turf of sorts, including pork belly served alongside abalone, and crispy sliced beef with scallop and minced salty fish.

Your experience at Wynn Macau’s Michelin-starred Wing Lei Chinese Restaurant begins at the stunning entrance, which is decked in giant Swarvoski crystal dragon scales on vibrant red walls. With floor-to-ceiling windows framing views of the city, the restaurant offers more than its intriguing aesthetics—the restaurant is most famous for its scrumptious dim sum dishes, including the shrimp rolls and baked abalone puffs. You can’t come to Asia and not have dim sum – especially the hand crafted dishes made by the master chefs at the two Michelin star, Wing Lei – a sumptuously decorated restaurant at Wynn that will delight every sense and tantalise every taste bud!. Dine under the austere gaze of the flying dragon, made with 90,000 pieces of crystal, which decorates one entire wall in this opulent temple of fine dining. Open for lunch and dinner starring a menu of classic Cantonese dishes.

The executive chefs of Wing Lei Palace and Wing Lei, Sammy Ho and Chan Tak Kwong, are seasoned masters of Cantonese cuisine. Together they conceived this steamed Empurau fish with preserved tree seeds, served in the sachet in which it was cooked. Empurau is a freshwater fish indigenous to Borneo that feeds on fruits fallen in the river from the surrounding rainforest, giving its meat a unique taste

The bar takes its cue from the 18th-century French chandelier which illuminates the whole space. The light is reflected in numerous mirrors and gilded mouldings, and semi-precious stones such as malachite, lapis lazuli, tiger eye and rose quartz are inlaid in the walls. This is somewhere you come to drink in the atmosphere as much as the cocktails.

There were also two fewer One-Star restaurants in the 2022 Guide, with Wing Lei Palace at Wynn Macau, Lai Heen at Ritz-Carlton in Galaxy, 8½ Otto e Mezzo – Bombana at Galaxy, Pearl Dragon at Studio City, The Kitchen at Grand Lisboa, Ying at Altira and Zi Yat Heen at Four Seasons Hotel retaining last year’s status.

We would start off our Macau trip with a bang at Michelin-starred Wing Lei (永利軒). I even had a table reserved at The Eight as backup. But an hour late arriving from Hong Kong thanks to the queues at different shuttle spots and everything just went sideways from there.
