There’s a great restaurant called Culinarium Khasheria, where you can get this soup that is amazing for a hangover. I know some people might be put off by the tripe, but it usually always has beef shin in it, which the chefs cook overnight without salt or anything - just an onion, a piece of meat and loads of water. Often in the mornings people go to a khasheria, where the soup dish there is called khash, and it exists all over the Caucasus - and in Armenia they make a very similar thing.

Culinarium Khasheria: helmed by Georgian TV chef, Tekuna Gachechiladze, this restaurant opposite the sulphur baths (be warned you will catch a whiff on approach) topped my Tbilisi dining wish list, so I booked a late lunch on Christmas Day, but in reality it disappointed. My impressions were not helped by a dish of under-cooked chicken, so pink, the waiter was horrified. However, the issue was well handled from a customer service perspective.

The food is very fresh and has a modern take on traditional Georgian foods with added complexity and international flavours but stays close to its roots. The chef, Tekuna, also runs Cafe Littera, which is more of fine dining, and unfortunately we couldn’t try it but definitely on the next trip!
