Embrace the Custom

Cutlery is available, but embracing the custom of eating with hands is part of the authentic experience.

Special Occasion Spot

Considered pricey, making it ideal for special occasions rather than casual dining.

Bukhara in Delhi ITC hotel has been recommended to me by few people for their dal Bukhara (aka dal makhni) Recommendations often come with reason, it is delicious. So if you’re ever in Delhi and you feel like Dal Makhni this is the place to be. (Yes rhymes are on purpose) Bonus point for the tandoori naan that was the best I had so far. #delhifood #northindianfood #indianfood #culinarytravel #...

Reviews Summary

Bukhara is a legendary Indian restaurant praised for its iconic Dal Bukhara, impressive naan, and rustic ambiance. While many rave about the authentic flavors and unique dining experience, some find the portions large and the seating uncomfortable. Service and booking can also be areas for improvement according to some diners, making it more suited for special occasions due to its price point.

"I had an amazing experience at The Restaurant! The ambience is absolutely beautiful — calm, cozy, and perfect for a relaxing meal. The food quality is top-notch; every dish was fresh, flavorful, and perfectly presented. The place is also very clean and hygienic, which made the experience even better. Overall, a fantastic dining experience — highly recommended! 🍽️✨"

"I am giving overall 3 star rating due to below reasons
1. They force you to go for fixed menu, instead of ala carte so that they can generate maximum revenue per table. This is enethical practice, we should have an option to select either options as they are provided by restaurant.
2. The service is very slow, it takes multiple reminders and followup to order drinks and other things. If u r charging and exorbitant money (around 10k per person), u should deploy a dedicated waiter per table.
3. The sitting arrangement is very uncomfortable, they gave stools and benches. Moreover they have literally placed a table and chair in every possible space available. One of our guest was not able to even sit properly because his knees were touching the table due to less space.
3. Some of the good items are average, like mutton raan, which is part of fixed menu. If u ask them to replace it with some other mutton items, they charge extra for that. Since u r charging 8k plus taxes already for fixed non veg menu, why u don't give options to choose the dishes, specially they are part of your fixed menu.

They god fame and and now they are misusing that market position in order to maximise their revenue, while completely ignoring the customer care and sevice. You can't run such business just on the fame for long time."

"This is a place that I have been frequenting since I was quite young. I haven't been for over a decade so when I was visiting Delhi, I was looking forward to it. The hotel lobby looked the same. It brought me back to my childhood. We started with beer and fresh lime soda. We then ordered the raan, chicken Malai kebab, fish kebab, couple of their famous dal, and a variety of naan, pudina parantha etc. Overall the food was fabulous! The fish tikkas were not as flavorful. We told them after we paid and the they took it really well and they said they would let the chef know. We ended the evening with delicious phirni and kulfi. Both were delicious 😋"

The best restaurants in Delhi NCR, revealed at the 2025 Top Restaurant Awards

There are restaurants that build reputations on changing with the times, and then there is Bukhara, which has built its legacy on refusing to. Since opening at ITC Maurya in 1978, it has served the same rustic North-West Frontier menu, in the same earthenware bowls, under the same rough-hewn beams. The ritual is part of the appeal: naan stretched as wide as the table, kebabs pulled straight from the tandoor, and the signature, almost synonymous dal, a black lentil preparation simmered on low heat for close to 24 hours until it achieves its smoky, buttery depth.

In contrast to the extravagant Dum Pukht, Bukhara serves its internationally-renowned kebabs in a dining room of clay tiles and bare wood, and dishes appear without cutlery but with bibs. It opened in 1977 and has changed little since then; the menu still consists of marinated meats cooked in a tandoor, along the famous black lentil and tomato dal, simmered for twenty four hours.
