What Travellers Say
Reviews Summary
Panificio Fiore is a beloved institution in Bari, renowned for its exceptional Focaccia Barese, praised for its light, fluffy texture and delicious taste. While many rave about the authentic flavors and great value, some reviews mention occasional inconsistencies in preparation or a slightly plain taste. The long queues are a testament to its popularity, but the wait is generally considered worthwhile for this local specialty.
"Such a great and authentic bakery, they excel in baking various types of bakeries and focaccia breads, using Bari’s ingredients and recipes.
We enjoyed every bite and it’s highly recommended, especially for early morning bites.
Our many thanks to the bakery attendant and the working team for sustaining such a key business in its best traditional form.
See you later!"

"This place is an institution for a reason! The focaccia is unlike any other focaccia, almost like a wedge of pizza! Incredibly light, fluffy, and DELICIOUS! You think you won't be able to eat the whole piece and in no time you will! Make sure to come before 1pm, since once they sell out of what they made that day, they close for the day. That's how you know how fresh it is!"
Rae Bernakevitch
"Very patient, kind servers and best Focaccia in Bari! I tried the classic one with tomatoes and olives and the one with onions. Very tasty, I never really liked the idea of eating ‘bread’ but this is much more. The dough is crisp and tasty, and soft at the same time; and it’s always fresh. The prices are only 2.5 euros. Must try"

Where to Eat (Local's Guide)
Panificio Fiore is another Bari institution — part bakery, part time capsule, and entirely devoted to the art of bread. This is the place locals have been coming to for generations, especially for their focaccia Barese, which is always fresh from the oven, golden with olive oil and studded with tomatoes and olives. They also do fantastic pane di Altamura and simple, rustic loaves that practically demand to be eaten with good cheese or olive oil.
Where to eat in Bari vecchia, the best restaurants
It is one of the longest-running bakeries in the city, set in an old church, with over a century of activity behind it and always under the management of the Fiore family. Here the (wood-fired) oven is always on, 24 hours a day, ready to welcome the amazing focaccia, (called 'hot wheel'), crispy on the base and soft on top. To get it, customers know they will have to queue patiently and wait their turn, but the wait is worth it.
