Located smack in the middle of the medieval center of Bologna toward the terminus of a dead-end alleyway, Vicolo Colombina looks at first like a typical traditional restaurant, but once the plates start hitting your table, you’ll see that the kitchen likes jabbing tradition with a spatula. The Bolognese is the pasta to get here. It comes out on the plates twisted into a pyramid, the homemade tagliatelle wider than what you find at more traditional trattorias and the sauce is richer.

I’d heard these guys prepared some of the best Bolognese in Bologna, and they’ve certainly earned plenty of awards and recognition to snag them such a title, including a spot on the Michelin guide. It was here that I tried lasagna with a white meat ragù for the first time, and I soon learned that I’d been missing out for quite some time.

Vicolo Colombina is another favourite venue of the Bolognese. Situated near the Saint Petronio Church, this modern restaurant truly captures the allure and essence of Bologna. From delicious homemade stuffed pasta and tagliatelle to succulent meat dishes, such as filet mignon of Piemontese beef, guinea fowl and rabbit.

Located in an orange-saturated side alley, this restaurant’s front doors are a welcome sight to any weary traveller. Their specialty of course receives rave reviews online. Make a reservation via their website and ask for the Lasagnette al ragu di cortile — a masterwork in homegrown northern Italian cooking.

We are not far from Piazza Maggiore, right in the city center. In vicolo colombina we find the ideal place for a romantic dinner. The furnishings of a pure white, perhaps to remember a dove, and decidedly minimalist give an immediate feeling of serenity.

Joining Trattoria Da Me on the Michelin guide, this restaurant serves traditional cuisine (a.k.a no fish) with a subtle contemporary twist. Think ravioli with artichokes and whipped parmigiano-reggiano. Just be sure to save room for dessert.

At Cambio and Vicolo Colombina, Massimiliano Poggi offers traditional cuisine. But at Trebbo di Reno he shows a more innovative side in his restaurant. “Divertiti” (have fun) is the recommended menu, with five courses.
