Qui il ragù viene fatto come veniva fatto dalle nonne una volta: dopo essere stato cotto per almeno sei ore, viene fatto riposare una notte intera e poi servito con vari formati di pasta tipica, come i manfredi con la ricotta e gli gnocchi con la provola.
