"We were recommended this pizzeria by frequent visitors and the pizzas didn’t disappoint. It was full of locals which was a good sign.
All the pizzas are quite innovative with zucchini flowers plus a cream zucchini sauce and a tomato Mediterranean one with tuna and no cheese. Both were very tasty.
We had very good service and we were no overly rush even though it was Saturday night. A booking was definitely needed."

"My husband and I went there and we ordered one pizza each plus a salad. I ordered a wholemeal pan pizza after inquiring what it was and the waiter explained it to me. Then he forgot about my order. Only my husband’s pizza and salad came, we started eating whatever is served. Husband gave 1/3 of his pizza to me. Both dishes were finished, my pizza still didn’t come. I went to ask where is it, the staff went to check, IT WAS’NT EVEN MADE! I followed and said if it’s not made I don’t want it, just bring the bill please. The bill came. My husband was not pleased with this and went to reason with them because they didn’t seem bothered or apologetic. The staff made it as if it’s my mistake because he could have made me the pizza within a few minutes but instead, I decided to ask for the bill. I refused to pay the service fee €5.6. They refused because apparently the fee is for napkin, cutlery etc (according to them). But it’s service fee - what would I pay for it when the service is not there?! In the end, they round down the bill from €32 to €30. We left really unsatisfied. They did not have a lot of mutual respect"

Born in Rome to parents from South Tyrol and Sicily, Friedi (that's how his friends call him), patron and pizzaiolo at Piano B in Syracuse, has always found the right stimuli in difficult times. This was the case in 2013 when the pizzaiolo who was working with him since he opened his restaurant in Ortigia, «the first to use Molino Quaglia's and to offer pizza alla pala, which was our signature pizza from the start», told him he was to leave to open his own business. It was then that Friedi decided to move from the dining room, which he had never left until that moment, to dough-making, using the mother yeast he had created two years before for fun, after an Api pizzaiolo course, «which I attended just to find out more about this world».

Technically just over the bridge in mainland Siracusa, Piano B has won various accolades for its pizza and is also part of the Slow Food movement. I particularly liked the fact that all pizzas could be made either Neapolitan-style (with pillowy, puffed-up crusts) or Roman-style (with thin & crispy crusts). So of course we ordered both!.

Piano B One night we crossed the bridge over to the Siracusa side to have pizza. The attention to detail here is remarkable. The water glasses were placed precisely on top of the printed O’s on the placemats.
