Farmacia Del Cambio

Founded in 1757, Del Cambio has counted Mozart, Verdi, and even Casa­nova as regulars and is worth a visit for the room alone. The food is delicious, particularly the finanziera, and somehow stays true to its Pied­mont roots, but they have admittedly gone the route of “chef-y” cuisine.

Set against the sophisticated backdrop of the pedestrian area of piazza Carignano, Del Cambio, which opened in 1757, is not only a restaurant but a piece of history. Following an in-depth renovation, the famous 18th-century ‘salotto’, the favourite haunt of Italian politician and entrepreneur, Count Cavour, re-opened in 2014 under the stewardship of chef Matteo Baronetto. Restored to its former splendour, the ‘salotto’ has once again become a symbol of Savoy elegance and gastronomic sophistication: a perfect blend of tradition and the authentic flavours of Piedmontese cuisine and innovation.

Farmacia Del Cambio – Farmacia del Cambio, located in the same square as Palazzo Carignano (the first Italian Parliament), is the younger sister of the city’s most historical restaurant, 1757’s Ristorante Del Cambio by chef Matteo Baronetto. Farmacia del Cambio’s marble tables, its impeccable service and the pastries (from chef Fabrizio Galla) will blow your mind and palate. The gianduiotto, made with gianduja mousse, anice bavarese, and a blackberry, orange, and vanilla jelly, is a must order.

The tables inside Del Cambio are surrounded by chandeliers, mirrors, and red velvet chairs, giving it an air of grandeur from another century. This restaurant has counted among its clients famous political figures of the 19th century such as the Count of Cavour. Del Cambio is a great place to spend a couple of hours relaxing in a unique setting, experiencing Turin’s tradition from a privileged spot, whilst finishing a glass of wine from their impressive vaulted wine cellar.

Well before Stanley Tucci made the place famous in his show Searching for Italy, this place is and always has been a Turin institution. There are never-ending lines throughout the day. Farmacia del Cambio began life as, you guessed it, a pharmacy that housed all sorts of potions and apothecaries hidden away in ancient ceramics.

For the fanciest night out in Turin, head to Del Cambio, adjacent to the Carignano Theater, one of the oldest in Italy. With its pearly white tablecloths, fresco-like wall coverings and ornate chandeliers, this establishment is the epitome of elegance. And the food is right up there with the decor.

It is located in front of Palazzo Carignano, seat of the Subalpine parliament. Cavour used to have breakfast or enjoy short breaks here during the day. Rumor has it that his secretary would make signals through the window across the street in case of need.

Meet the Crubik – a reinvention of the classic croissant hailing from the historic Farmacia del Cambio that has been causing quite a stir in the city’s culinary circles. But let us begin… from the beginning.

Fabio and I met in-person a few months ago, and when we both knew we were going to be in Torino this year, we decided to go on a mission to try the famous sphere and cube croissants from Farmacia Del Cambio.
