Hueso Restaurante

It’s just two doors down from Hueso, perhaps Guadalajara’s most famous restaurant. Where Hueso is celebrated, Hato Ramen is, at least for now, a low-key word-of-mouth place. The restaurant is a minimal study in gray, thanks to the use of lava stone in everything from the stools at the al fresco tables out front to the shingles that line the restaurant’s wallas.

Hueso makes a dramatic interior design statement, with white-washed walls lined with bones and long tables, while chef Alfonso Cadena's family-style platters of internationally-influenced dishes encourage a communal vibe. Diners dig into dishes such as roast chicken with mixed vegetables, towering salads, and deconstructed fish and chips with thin camote (sweet potato) crisps instead of traditional fries. Or just head to the intimate bar instead, located in an attached space in the Deco building that's clad with tiles produced by Cerámica Suro, Rene Redzepi's resource of choice when it came time to order custom ceramics for Noma Mexico, as well as Sarabia's maker of his compelling and topical ceramic art.

Hueso: As the name indicates, bones are an important part of this restaurant’s identity. Stylish and hip, this monotone venue, designed by a group called Los Contratistas, is decorated with more than 10,000 bones, and most meals are served around a long, 54-person communal table (they also have private rooms for groups of 10 and six). The menu is overseen by Chef Alonso Cadena, whose staff works from an open kitchen, allowing you to witness the creation of the contemporary cuisine.

We dined at the absolute best restaurants in Guadalajara, one of which is called Hueso, located in Colonia Lafayette, also known as the Lafayette Design District. I have never enjoyed photographing a restaurant as much as I did Hueso, which I had to pull a couple strings to do so, as the restaurant is only open for dinner and I came through on a weekday morning. I must thank my handsome friend Alex Martínez for his assistance with securing the bag.

Tourists with equal interest in archaeology and monochromatic minimalism will gravitate toward Hueso, a restaurant known for its incredible food and also for its 10,000+ animal bones adorning the whitewashed walls. If you want to dine outside in the sun, there’s Bruna, whose backyard feels like a botanical garden full of well-manicured shrubbery and string lights, and whose octopus carpaccio is not to be missed.

Hueso: A Guadalajara stand-by at this point, the place is still excellent after over 15 years running. The dining is family-style at a long table that runs through the middle of the restaurant, surrounded by the bleached-white bones of thousands of animals. The chef’s menu is this 8-course over-the-top smorgasbord that doesn’t ease you from one dish to the next but slams you against the wall with flavor.

Hueso—which means ‘bone’ in Spanish—lives up to its name: everything in the jaw-dropping space, located in a ‘50’s era private house, is surrounded and divided by walls made of mosaics of bones reminiscent of a Louise Nevelson sculpture. The dining space is open and airy, the busy kitchen in view. Seating is at one long communal blond wood table.

Then there’s Hueso, the place where any blogger who is anybody seems to eat. If you don’t know Spanish, “hueso” means bone—and the restaurant decor includes hundreds of bones (check it out, if you don’t believe me). I’m typically wary of anything that feels like it might be popular for being popular, so I set this one aside for now.

We only had one day to dine in Guadalajara the first time we visited and when we heard about Hueso, we knew it had to be it. We might have been biased by their communal table but it was absolutely worth it!. A very unique space with a concept that felt close to home as we sipped cocktails and watched full action in the kitchen.

Opened in 2014 the place is bone-white inside and out and covered in femurs, jaw bones, and craniums of hundreds of species of mammal, fish, and fowl. I’ve never had quite a tasting menu like the one at Hueso which is uncategorizable in style and cuisine but presents each dish as a flavor-packed punch to your palate.

With deep Mexican traditions, where dishes such as meats in their juice, birria tatemada, the succulent pozole or the delicious tortas ahogadas made with salted beef and bathed in tomato sauce are served, undoubtedly an excellent gastronomic option.

Hueso is one of the most unique dining experience I’ve had – the restaurant is all white. Everything from the ceiling, the floors, decor and tables – everything is white. The staff is also dressed in nude colors so you can focus on the food.
