It's just a little hole in the wall, but attractive enough to host Rick Bayless when he made an appearance in Mérida recently. The food is traditional Yucatecan, but with surprises, such as a smoked pork belly panucho, local tacos filled with black bean purée and topped with any one of a number of things, and queso relleno negro, Edam cheese stuffed with ground pork seasoned with charred chiles. If you want casual, I would definitely recommend Manjar Blanco over La Chaya Maya.

But then I tried the cochinita pibil served at Manjar Blanco, a simple restaurant off a small park in Mérida. Chef Miriam Peraza learned to make it as a little girl, but the cochinita she serves in her restaurant is stylish, with a cheffy swipe of black bean puree on the side of the plate and a ceramic boat of habanero sauce. At first I scoffed at the presentation.

If you’re looking to experience a traditional breakfast (fresh, hot, and lovingly cooked), Manjar Blanco is the spot for you. Manjar Blanco is (literally) across from the Santa Ana park, and just a few steps away from the Remate de Paseo de Montejo. If you’re going in the morning, their breakfast packages are a great way to start your day; they include bottomless coffee, fresh-squeezed orange juice, a fruit bowl, and a main that can be eggs with Valladolid sausage (Longaniza), Huevos Motuleños, or Chaya Omelette, among other delicious options; they all come with black bean soup, fried plantains, or Edam cheese, in addition to hot Yucatecan Francés baguettes.

Manjar Blanco is a highly recommended restaurant that’ll help you do just that!. La Chaya Maya is also very popular though I wasn’t a fan of the queso relleno here, and I’m not sure whether it was just the restaurant or the dish itself (again, I just wasn’t a fan of stuffed cheese, which is so weird considering how much I love cheese in general). When it comes to marquesitas, just look for a colorful stand or street vendor as you’re walking around and you’ll be in the right place!

I ate my best restaurant taco at a place called Manjar Blanco. This famous Merida restaurant is featured prominently in my post entitled Typical Food In Merida You Won’t Want To Miss. It’s one of the top restaurants in Merida for traditional Yucatan food, and was highlighted in a Netflix series called The Taco Chronicles for its version of Conchinita Pibil.

Queso Relleno is a hollowed out ball of Dutch Edam cheese – but the stronger type, not the mild type. The cheese is filled with minced pork, normally spiced with the local achiote. This is then covered in the blanco sauce (a white sauce made from turkey stock, flour, butter and sometimes saffron).

I’d slip in for a plate of cochinita pibil, slow-cooked pork marinated in sour orange, achiote and other spices, at Manjar Blanco, a simple eatery opposite Parque de Santa Ana that American chef Rick Bayless has raved about.

An institution for dining in Mérida, Manjar Blanco came recommended. The breakfast was traditional, I think it is more of a lunch spot. Do ask to eat out on the terrace as it’s very idyllic.
