What Travellers Say
Reviews Summary
Diners consistently praise CRUDO for its innovative Oaxacan-Japanese fusion cuisine and intimate omakase experience. The creativity, bold flavors, and artful presentation of each dish are highlighted, making it a memorable culinary journey. Some found the portions small for the price, and one reviewer noted a disappointing vegan option and poor service regarding dietary needs, though this seems to be an outlier.
"Dining at this exclusive Japanese restaurant in Oaxaca was truly a unique and unforgettable experience. What sets it apart is the brilliant fusion of traditional Japanese techniques with local Oaxacan ingredients a combination that results in something both authentic and entirely original.
Every dish was crafted with precision, elegance, and a deep respect for both culinary cultures. The flavors were bold yet refined, and the presentation was nothing short of art. You can feel the passion and creativity behind each plate.
The space itself reflects the same high standard intimate, beautifully designed, and with a serene atmosphere that invites you to savor every moment. It’s not just a meal; it’s a full sensory experience.
For anyone looking to explore something truly special and elevated in Oaxaca’s food scene, this restaurant is a hidden gem. A perfect balance of innovation, tradition, and exclusivity"

"This place is just insane! My husband and I went for the tasting menu and enjoyed so much that we reserved the next day to have the private experience with the chef, two days in a roll. We just could not have enough!
The creativity of the food, mix of flavors, exclusive experience, kindness of the staff, all was perfect. The menu had 10 courses or chapters, as they say. The shrimp amuse bouche was delicious, the tuna sample with fruits was out of this world and the chef sushi were my favorites. But, truly, all was really good. I wish I had CRUDO in my neighborhood to taste all the new chef’s creations."

"We ate here for our Thanksgiving holiday dinner. The food and experience were fantastic. We are food snobs and this met our high expectations. The flavors of each dish were multidimensional. It was impressive how the dishes were creatively designed to use Japanese style but with Oaxacan flavors and ingredients. Our service was also great. We really liked our chef, Regina’s detailed descriptions of each course.
We found the experience and the food actually affordable for the value of what it was and the quality of the cuisine given.
I read some of the negative reviews and I am baffled. How anyone could rate this place low seems very unfair and maybe they just aren’t the right candidate for this level and type of cuisine."

In These Oaxaca City Restaurants, Japanese Flavors and Techniques Take Center Stage
Seated at the oak sushi bar of Chef Richard Arellano’s five-seat, omakase-style restaurant Crudo, I find few cues I’ve secured a spot at the hardest-to-get reservation in Oaxaca. His dishes—things like yuzu clam sashimi and ikura nigiri—don’t conjure typical Oaxacan fare. Nor do the intimate space and wabi-sabi interiors bear any resemblance to the leafy courtyards and cathedral views of the city’s other fine-dining establishments.

Ricardo Arellano is the responsible of the asiatic creationsthat come out of that kitchen. Give Japanese dishes a chance with a completely new experience. It is an omekase bar with Oaxacan flavors.

A chefs’ guide to the best food and drink in Oaxaca City
Tamarra says you cannot skip Crudo, a five-seat Japanese-inspired restaurant that uses Oaxacan ingredients to create fusion cuisine – the likes of which you’ve probably never had before. And while in Oaxaca, you may as well head out beyond the city limits to the town of Zimatlán, a 45 minute-long drive south where, says Tamarra, you’ll find the best weekend brunch at Portozuelo, a small restaurant attached to a farm and orchard where many ingredients from their recipes, like water chilis and guava, are grown. “Everything is cooked over fire on a comal.
A Bikepacker’s Food Guide to Oaxaca – Still Out Riding
Dive down the Oaxacan foodie rabbit hole by checking out the following world-class restaurants: Crudo, Restaurant Alfonsina, Criollo, Agua Miel, Levadura de Olla, Origen, Hotel Sin Nombre (vegetarian), Teocintle, and Casa Oaxaca. You’ll need to book in advance for all of these places, at least in the evenings. My personal favourites are Levadura de Olla (beautiful setting and a tier down in pricing) and the seasonal Agua Miel, which is actually out of town, near San Agustin Etla, and be tied in with the Excursiones en Etla route, or a day ride.

Where to Eat (and Stay) in Oaxaca Mexico
The Oaxacan-Japanese fusion omakase tasting was so unique — and every dish was perfectly presented and absolutely delicious. While expensive for Oaxaca, it was worth every penny and still only a fraction of what this experience would cost in the U.S. or Canada. We had to make a reservation through WhatsApp well in advance and pay a deposit — which makes total sense because the Chef’s Table style of dinning can accommodate only 8 people.

The 15 Best Restaurants in Oaxaca, Mexico
I am always a little apprehensive about Asian fusion restaurants, so when we made a reservation at Crudo, I was curious to see how Japanese and Mexican fusion dishes would be served. When we first tried to find the restaurant, we were confused by the lack of signage, but luckily a worker was standing outside on his break. We were welcomed by a very minimalist and Japanese interior design inside with just bar seating.

The Michelin Guide in Oaxaca – Call Me a Food Lover…
Crudo – Mention – A huge caveat… I am a huge Japanese food snob and went into Crudo with great uncertainty 2 years ago. Chef Ricardo Arellano uses Oaxacan ingredients to deliver his interpretation of Japanese flavours, but was also quick to tell me he’d never been to Japan. The ingredients are incredible and the preparations are very creative.
