What Travellers Say
Reviews Summary
Augurio garners praise for its legendary fine dining, exceptional service, and a menu that thoughtfully revives traditional Mexican dishes, particularly its famed mole poblano. Diners often highlight the masterful execution of food and the warm atmosphere. However, some guests have encountered issues with service, including language barriers and a notable incident involving reservation management.
"Masterpiece. One of the best meals I've had in Mexico. From the exceptional service, the lovely atmosphere, to the masterful execution of the dishes, this spot is legendary.
Romeritas: Soft delicate shrimp patties in mole. Really interesting texture and wonderful flavor.
Arroz con mole: We had the house mole in numerous ways, because it is just so good. A fascinating take on mole Poblano, this version uses no chocolate, but gets it's flavor and texture from the combination of dried chiles and textured with plantain.
Sopa de habas (lima beans). Wonderful soup, with some great acidity and depth. A perfect start.
Pulpo (octopus): Cooked perfectly, in an extremely deep, slightly spicy salsa. This was the winner of the night, especially with the house made tortillas.
Lechón: A more manageable take on the classic, with a perfectly crispy skin, pops of freshness and acidity to balance the fattiness. Tender, cooked perfectly.
Postre: We shared a merengue tart with fresh fruit, which was delicious, and complimented a small digestif to cap everything off.
Service was extremely knowledgeable and thorough without being overbearing. Highly recommended as a special occasion. Pricey but not over the top."

"The food was amazing. I had the beef tongue tacos and el mole poblano with chicken. Both amazingly delicious. The homemade tortilla chips, bread and dips were all very yummy too.
The only thing I didn’t like was the music. It was just some kind of really tacky dance tracks on repeat. It really wasn’t necessary.
Service ok. Although they had an English menu, the waiters didn’t really speak English. But the food was excellent so I’d recommend it."

"If you're the type of person who likes mole, this restaurant is for you. They have different types of it and each dish is incorporated with it. I'm not the biggest fan of mole but I liked some of the dishes we had especially the lechon, the mole there was green and had a lighter taste compared to the others.
They also have plenty of awards so I believe that proves a lot already. It's like a fine dining place but they don't have ac. The servers are very attentive and really worth the tip."

A Weekend Guide To Puebla, One Of Mexico's Best Hidden Gems
Augurio, situated on the ground floor of La Quinta Esencia, is owned by celebrated chef Ángel Vazquez (of Intro fame). His all-day restaurant features a rugged, stripped-back decor with stone walls and flooring, alongside cheery pops of hot pink. As for the menu, Vazquez focuses on “food that’s getting lost, and food that used to be everyday dishes here.” In addition to different moles – his mole poblano recipe was passed down from his great grandmother and is notably absent of chocolate – Vazquez turns out savory snacks, including cow’s foot tostadas and fideo seco with pork crackling and avocado.

Check out what Puebla’s next generation of chefs is up to at Augurio, a recently opened spot from Angel Vazquez just a few blocks from the cathedral at the new Quinta Esencia hotel. Take a seat in the spare dining room and start with something from the cocktail menu, which spotlights tequila and mezcal in drinks like the La Santísima, made with blanco tequila, grilled-pineapple syrup, and grasshopper salt ($6.30). Dig in to dishes like crispy-skinned suckling pig in pipián verde sauce ($12.50), calf’s-foot tostadas ($2.50) and chicharrón-crusted prawns served with avocado salsa ($9.50).
