A harmony of Japanese with Italian influences. The Paua stood out the best Ive had - the Chef explained it was steamed in Sake over 5 hours. The knives provided had clearly been stone sharpened and could cut paper. Great for the discerning gourmand who doesn’t need pyrotechnics to be impressed."
