The charming elderly owner, Amor Fialho, is the third generation of Fialhos to operate this popular restaurant. He has handed off daily operations to his children, Helena and Rui, but he's still present most evenings in the kitchen, and has been known to give foreign visitors a tour, pointing out photos of the former Spanish king's visit. The dining room, with a beamed ceiling and painted plates hung on its walls, is regularly packed on weekends, and reservations are essential.

For tradition-steeped food in a more formal setting, tardis-like Fialho, tucked up a side street, is the place. You arrive to tables already decked with petiscos, and pick the ones you fancy (winners are the cured ham and just-out-of-the-oven chicken pie). The restaurant is famed for a partridge stew called perdiz à convento da Cartuxa but I’m swayed by baby broad beans with fried ham.

Within you’ll find a charming European interior with antique plates on the walls, crisp white tablecloths, and waiters in waistcoats delivering old-school silver service.

The classic, ageless establishments like Fialho, and the terrific Taberna Típica Quarta-feira on one side, and the newer modern young blood on the other. Origens is in the latter, but the menu is a nice ode to the former. Although the menu is so ingredient driven, it constantly changes, and not visible on their site as a result.

If you’re looking for traditional Alentejo cuisine, Fialho is the spot to go. It runs on the more touristic side but is still an amazing historic restaurant. The stars here are classics like borrego assado (roasted lamb) and whatever appetizers are on your table when you arrive.
