At the Moorish's quarter's Botequim de Mouraria, gourmands clamor for just nine counter seats (No tables! No reservations!), to which elaborate Alentejan dishes of the day emerge from the kitchen of Chef Domingos Canelas and his wife, Florbela.

At Taberna Típica Quarta-Feira (R. do Inverno 16, 7000-599) you’ll be served a selection of daily dishes chosen by Chef João, whose father opened the taberna in the early 1990s. If the lack of a menu concerns you, don’t worry; you’re in good hands.

Surely the definition of a hidden gem, Taberna Típica Quarta-Feira is tucked down a tiny side street but packed out every night (reservations are essential). There’s no menu – you’ll simply be presented with a series of dishes by the chef for a fixed price (€43 per person in March 2025). You’ll also want to arrive very hungry because the dishes just keep coming and coming.

You’ll see it as charcuterie, salami, and in a stew with clams known as Carne de Porco à Alentejana (see below), but my favorite method is the incredibleness on the table at Taberna Típica Quarta Feira in Évora. Their all-you-can-eat feast of slow-cooked black pork is served as tender as the night and counts for a meal you’ll never shake from your taste buds.

The classic, ageless establishments like Fialho, and the terrific Taberna Típica Quarta-feira on one side, and the newer modern young blood on the other. Origens is in the latter, but the menu is a nice ode to the former. Although the menu is so ingredient driven, it constantly changes, and not visible on their site as a result.

One does not simply walk out of Taberna Típica Quarta-Feira – you’re all but guaranteed to roll your way down the rustic cobblestone alleyway after this meal. This family-run tavern works with a set menu. For around €35 the owner will bring out a seemingly never-ending parade of plates, big and small.

Taberna Tipica Quarta-Feira: A highly recommended restaurant that’s on my list for next time. Here, you make a reservation and you’re severed whatever the chef is cooking. It’s family style and there’s no menu, and the reviews are glowing with many people saying it’s the best meal they’ve ever had.

Walk the silent backstreets beneath the 16th-century aqueduct to Quarta-Feira, where five courses, including roast neck of pork with spinach migas and rich, yellow Torrao de Evora, made from egg yolks and almonds, cost £30 with wine (booking essential; 00 351 266 707530; Rua do Inverno 18).

If you have to order one thing from the menu at Taberna Típica Quarta-feira, it has to be everything as this family-run restaurant works without a menu, which makes the meal always a surprise. They serve the cuisine of the region using only the most authentic Alentejo flavors.

Perhaps one of the most fun food experiences in all of Évora (and maybe, Portugal). With only 12 tables, no wonder reservations for this tiny, casual restaurant are booked two weeks in advance. Proprietor, chef and jovial host for your meal is João Dias.

Note there is no "choice" as to what you eat - you eat what they are cooking that day. This was a real experience - Grandma and Grandpa cooking, their son is the maitre de and grandaughter busses tables etc.
