Tabar, its chairs spilling out beneath sycamore trees, forms part of a buzzy courtyard set back from the city’s river. It specialises in Slovenian small plates – beef tartare with burnt aubergine, octopus with “half way” kimchi (not fermented, but cooked in spices), and warm rabbit terrine with burnt baby leeks surrounded by a moat of buttermilk and horseradish. Inventive vegetarian options include white asparagus with wild garlic, and ground chickpeas topped with bright peas and freshly picked salad leaves from the chef’s garden.

Nestled beneath the castle hill in the old town, the TaBar Restaurant, also awarded a Bib Gourmand, has been delighting regulars and visitors alike for years with a different approach to haute cuisine in a relaxed atmosphere. Chef Jakob Pintar creates culinary delicacies in his own style. He says the best cuts of meat are all cuts, and the best vegetable is the freshest one.

For natural wine lovers Tabar is Ljubljana’s hotspot with perhaps the most well-stocked list of those kinds of wines, served alongside small plate, but elaborate dishes by young chef Jakob Pintar. If you are up for some fun-dining, go to Aftr – a recently opened bistro by Jorg Zupan, the same chef and the same location of the former Michelin starred restaurant Atelje.

TaBar offers cold and warm tapas the Slovenian way in a relaxed atmosphere. Creative and daring eats sit alongside a wine list with predominantly ecological wines. The man who runs the place, Jakob Pintar— who by the way won the title of Gault & Millau Slovenia Most Promising Young Chef, succeeds in surprising his guests every time they visit.

Yes, chef Jakob Pintar – who’s worked with Viennese legend Heinz Reitbauer, Gordon Ramsay and Joel Robuchon – does make a mean small plate.

And they really are, but we haven’t seen any serious and ambitious restaurant other than TaBar try to deal with the burger format. Therefore, we had to focus our search for the most delicious burgers mainly on specialized bars, some of which proved to be excellent. This is our list of the most delicious burgers in Ljubljana.

A tapas and wine bar is located in the old town center within the fashion house Ikona This Bar, which fascinates with the variety of its offer and above all its quality. Fresh, local ingredients and excellent wines come first at TaBar. In addition to the regular menu, they also offer lunches and Sunday brunches.

Recently reopened in a new location in the former Yugoslavian Rog factory, TaBar got a new vibe. Brutalist, minimalistic concrete interior is contrasted by the greenery inside and out. They started to serve an homage to traditional Slovenian plates for lunch and in September will open a fine dining room.

At the moment probably the best one is Tabar where they master small plates (chef Jakob Pintar was our San Pellegrino young chef finalist this year) and have by far the best and most adventurous wine list in town. The potential for quality bistros and wine bars that offer small plates/snacks is huge.

TaBar was a bit pricer than what we’d been used to over the last couple of weeks, but the food was excellent and they had the longest list of orange wines in the city. We couldn’t decide what to get so opted to let the chef choose for us but I couldn’t tell you what we ended up with.

I visited this restaurant on my very first afternoon in Ljubljana. I spotted it on a side street and their sign out front promising local tapas and local wine. It’s a trendy bar & restaurant, but their menu offered a huge variety of Slovenian food.

TaBar is a vibrant tapas restaurant in the historic centre with traditional Slovenian dishes and a modern spin. Try their version of Jota stew or Slovenian-inspired tapas. They also have tasting menus and an excellent selection of Slovenian wines.

These include TaBar, Restaurant JB, Gostilna AS, Grič, Gostilna na Gradu, and the newly included Restaurant Strelec. Other Slovenian restaurants on the list include Hiša Franko, Hiša Denk, Gostilna pri Lojzetu, Restaurant Topli val, and Milka.

I really wish we had a chance to visit TaBar – Slovenian’s version of tapas and wine. But unfortunately the restaurant was already full, so without a booking it’s very difficult to get in.

The Bib Gourmand designated restaurants are Gostilna na Gradu, Gostilna Repovž, Jožef, Mahorčič, Rajh and Ruj, which already won the accolade last year, plus TaBar.

You should definitely pay a visit to Dvorni Bar, Movia Wine Bar, Evino, Wine Bar Šuklje, and TaBar, a Slovenian tapas and wine bar.

TaBar had really nice tapas and is a good option if you want a few small dishes rather than a main – try the octopus and silk tofu!
