Reviews Summary

Sacha Restaurant is widely praised as an exceptional culinary institution, celebrated for its creative Basque and Galician cuisine and impeccable service. Diners consistently highlight the personalized tasting menus, the quality of ingredients, and dishes like the 'Falsa Lasaña de Txangurro' and 'tortilla vaga' as standouts. The intimate and characterful ambiance, coupled with the attentive staff, creates a memorable dining experience that many describe as a must-visit in Madrid.

"Our visit to Restaurante Sacha in Madrid was nothing short of extraordinary, thanks to a recommendation from a chef friend. We were welcomed personally by Sacha himself, who is as warm and charismatic as the stories suggest. Without a formal menu in hand, he asked about our likes and dislikes and curated a personalized tasting menu paired with outstanding wines.

Each dish was a masterpiece, but the standout was the sardine—unlike anything I’ve ever had. The Falsa Lasaña de Txangurro was also a revelation, with perfectly balanced flavors that left us speechless. The service, ambiance, and, most importantly, the food exceeded all expectations.

I wholeheartedly encourage anyone visiting Madrid to experience Sacha. You won’t be disappointed, and, like us, you may find yourself with a new favorite restaurant in the city."

"Absolutely original excellent clean, and casual looking but at same time rich on delivering flavour and precise. No wonder it has the reputation of a quintessential original basque bistro that precedes it. Thoroughly enjoyed the food, highlight was the lamb kidneys as well as Sacha’s take on crab lasagne, lobster salad was excellent and the cod tartare - simple but exceptional!

The service was caring, we were looked after by the manager Jason and the attention as paid throughout our meal: serving portion sizes (splitting dishes into two plates before serving etc). We finished with a lovely home made and fresh tasting sorbet on the terrace. A meal to remember.

MUST visit when in Madrid."

"Sacha Madrid is truly an institution. You feel it the moment you step inside. It is not easy to find a table here, and I was lucky to get a late lunch reservation. The ambiance is full of character, with ultramarine blue floors and white walls adorned with framed historical photos and artwork. The space feels like a charming home, and the combination of blue and white tones with crisp white tablecloths creates a warm, inviting atmosphere.
The service was impeccable from the start, the staff was incredibly attentive and kind.
The food combines classic tradition with artistic expression. The “fake lasagna” filled with king crab was outstanding, delicate yet rich in flavor. A large langoustine served on a vegetable sauce was equally memorable. We also tried the “Snowfall” salad, a refreshing mix of peach and young pea shoots with a perfectly balanced dressing. The sole meunière was flawlessly cooked, delicate and buttery. It paired beautifully with a non-oaked Albariño, which was crisp, fresh, and vibrant. Dessert also deserves a mention. I forgot the name, but it was absolutely delicious. I will let the photo speak for itself in my post.
The menu was only in Spanish, but we used our phones to translate and never felt lost. The manager and our waiter explained every dish with care and enthusiasm, so the language was never an obstacle.
We were truly happy to find a table. Sacha is much more than a restaurant. It is an experience worth having in Madrid."

How Madrid Became One Of Europe's Best Food Cities

More than a foodie, Sacha Hormaechea is a chef, server, sommelier, host, and poet laureate of the Madrid kitchen, a man who has turned long meals and longer post-meal conversations into an art form. After 51 years of soul-stirring cooking and candlelit bonhomie, Sacha feels more like a private dinner club than a restaurant. The dishes zero in on all the right pleasure centres: abuela-approved pots of simmered lentils, briny-sweet spider-crab ravioli with sea urchins and jalapeño-infused oil, an unctuous tortilla with islands of smoky chorizo and pickled pepper.

Bistronomía: Casual Fine Dining in Madrid

Madrid is home to many of Spain’s best restaurants, from gleaming modern psychedelia to classical elegance, but Sacha, despite being neither, might be the most respected restaurant in the capital. The eponymous Sacha Hormaechea took over this Madrileño bistro from his parents, and in the intervening decades has become the chef’s chef, a man whose dishes are known and appreciated by the food intelligentsia in Spain and beyond. The secret is in a consistent combination of excellent ingredients, precise technique, and just the right amount of creativity.
