If you're after a traditional Mallorquin breakfast, this the place. C'an Joan de Saigo has been serving up ensaimadas – the island's equivalent of a croissant – since its opening in 1700. For something with so much heritage it's unshowy – and pleasingly untouristy - tucked away down a small alley in the heart of the old town.

Joan de s’Aigo couldn’t have predicted that mixing the snow his men collected from the Serra de Tramuntana (the mountain range claiming most of Mallorca’s southwest and northeast) with fruit juice would continue to yield results a few centuries later. And yet, that’s exactly what happened.

It is not just the capital city which offers exceptional gastronomy, where visitors will find an array of delightful venues. Take for example, the ASTIR restaurant by the exclusive hotel of Iberostar Grand Portals Nous, which is the perfect setting to discover the authentic flavours and products of Mallorca. Now in its third season, their menu is based on local products through working with producers from the area, where diners can discover varieties of native products through a selection of innovative culinary techniques.

Can Joan de s’Aigo is a traditional chocolate bar in Palma that was founded more than three centuries ago. It is especially famous for its ensaimadas and cuartos and is an obligatory stop on any visit to the Mallorcan capital. All their products are handmade and their prices are really affordable, among which their homemade ice creams -the meringue milk ice cream is exquisite-, sweet and savoury pastries typical of Mallorca and hot chocolate stand out.

How about a 200-year-old traditional ice-cream parlour (Can Joan de S’Aigo Cafe) or a herbalist founded in 1890. Traditional Mallorcan textiles from La Filadora – founded in 1918, where you can buy the unique double-sided patterned linen and cotton woven textiles that are so much a symbol of the Balearic islands. Or Sombrereria Casa Juliá, founded in 1898 where you can take your pick from a whole range of traditional hats!

Ca’n Joan de S’Aigo is Palma’s oldest coffee house and is the best place to sample another of the island’s specialities. Ensaïmada is a coiled sweet flaky pastry made from flour, sugar, yeast, eggs, and lard, eaten throughout the day. Mallorcans dip the sugar-sprinkled pastry into their morning coffee but later it becomes an afternoon snack, stuffed with custard cream, chocolate or even slices of Sobrassada.

The route takes us onto a very narrow street: Can Savellà (13), where some of Palma’s best courtyards are found, such as Can Catllar de Llorer, Can Vivot and Can Juny. From there, we can go to Plaça de Cort (14), where we find the Ajuntament (City Hall) and the “Olivera” de Cort olive tree, a 600-year-old natural wonder with an impossibly twisted trunk that serves as a meeting point for friends and lovers.

If you want to taste all the Mallorquin specialities, don’t hesitate, go there!. From sweets with ensaimadas, coca de patata and their signature hot chocolate (literally melted chocolate, not mixed with milk or water!), or if you prefer savoury: coca de trampo, empanadas and more. They have a few locations around town, my favourite has to be the oldest one: I love the charm factor once you step inside.

The afternoon snack, called a merienda, is a type of "ritual" for Mallorcan people, and having a hot chocolate is almost a "religious must" for many. That's why, in an article about patisseries in Palma de Mallorca, we couldn't miss out Ca'n Joan de s'Aigo, the most famous chocolaterie on the island. With more than 300 years of history behind it, their speciality is their almond ice cream.

Currently, the business has two different establishments in the city, the first one and most popular being located in Calle Sanç, in Palma. Note that this famous café is also just a 10-minute walk away from Purohotel Palma. Furthermore, there’s also a second Can Joan de S’aigo locale, found in Baró de Santa Maria del Sepulcre street, which is even closer to the aforementioned urban hotel.

This temple of the Mallorcan restoration opened its doors in the 17th Century (if you don’t believe it, there are some tiles on its walls that confirm this). The most classic taste to try at Ca’n Joan de s’Aigo is hazelnut. But beware, do not even think of ordering just that, instead combine it with a “quarto” (a soft and fluffy almond brioche) to round off your visit.

Boasting three charming locations, the flagship bakery located at Calle Sanç preserves all the features of the original bakery from 1700. Best known for their homemade ice cream, hot chocolate and ensaimadas, this Palma bakery is a great afternoon pick-me-up if you need to rest your legs.

At the beginning of the 19th century, ‘Joan de s’Aigo’ was a businessman who invested in recruiting men to collect snow and store it in snow stores known as “cases de neu” in the Tramuntana mountain range. He came up with the idea of mixing the water which had melted from the “pans de neu” with fruit juices. This was the precursor of today’s ice cream.

Set deep in the labyrinthine heart of the Old Town, it is not easy to find Ca’n Joan de S’aigo but given that the pastry shop has been serving mud-thick hot chocolate and potato-flour sponge cake cuarto – the latter is dipped in the former – for more than 300 years, it’s certainly worth the navigational challenge.

For a truly unique experience, cool down at C’an Joan de S’Aigo, the oldest cafe in Palma. This historic family-run cafe and bakery was established in the 1700s and specialises in ices. Can you imagine what the almond ice cream from Ca’n Joan de S’Aigo must have been like that doctors used to prescribe it to feed the sick and as a painkiller!. Today it is made just like it was 300 years ago.
