Reviews Summary

Jose Maria's Restaurant is celebrated for its legendary roast suckling pig and traditional Segovian cuisine, set within a historic and charming ambiance. While many rave about the tender pork and exceptional wine selection, some diners have noted high prices and occasional service lapses, though these are often overshadowed by the overall authentic experience.

"Absolutely the best meal we had in Spain! The suckling pig was incredibly tender, juicy, and perfectly cooked—truly a standout dish. The ham was delicious, and the croquetas de jamón were creamy and full of flavor. The judiones caldo was rich and comforting—an amazing traditional dish. The sweet ponche de Segovia was delicious and refreshing, Service was warm and attentive, and the atmosphere beautifully combined tradition with comfort. A must-visit in Segovia—worth the trip on its own! Many don't know but Segovia is a beautiful small town."

Franklin Duharte

"We made a reservation the day before visiting, and went on a Monday night.

Jose Maria's is a beautiful and good sized venue. Great atmosphere.

The waiter's detected my struggles with speaking Spanish and gave us English menus and conversed with us without issue. Staff were very friendly.

We ordered a soup dish (1 portion) and said we would share it. They kindly split it into two bowls.

The main dish was the suckling pig. The waiter brought it out and theatrically carved it jnto six portions using a dinner plate to carve it. The dish tasted amazing.

Suckling pig is a specialty in this region of Spain, and Jose Maria's serve and amazing dish. I'd go back and highly recommend it to other visitors."

Warren Bitner

"Excellent food and service, recommended by so many locals and friends. The suckling pig was fantastic and the little show that precedes it with the cutting up of the meal was entertaining.
Service was really exceptional and the food was very, very good.
Your wait for the suckling pig may take longer than you expect as they roast one pig for a few tables in case you ordered less than a whole pig. Each portion per person costs about €32, so a whole pig costs €128.
Its a bit of a walk from the town center but we'll worth the visit. Book in advance."

Where to Eat in Segovia, Spain

If La Concha represents artistic rebellion, José María just up the road is a more traditional Segovian institution. Lunch service is a pageant, with whole suckling pigs belly-flopped into terracotta dishes and served up at the table, often by a medal-laden José Maria himself, who cuts the tender flesh with the edge of a dinner plate. For a less theatrical and lighter meal, stop at the bar for a glass from one of the restaurateur’s own exceptional wineries, Ossian or Pago de Carraovejas, and a few raciónes (larger portions of tapas that you pay for).

Just Back From…Segovia

All the talk about judiones had our stomachs rumbling, so around 8 p.m. we strolled over to Restaurante José María, one of Inés’s favorite spots in town, which immediately won us over with its rustic yet refined décor and lively front bar, where locals were crammed around the counter, slinging vermouth and inhaling tapas. Sadly, the main dining room didn’t have the same buzzy atmosphere: “The locals won’t arrive until 9:45,” explained our server as he poured a generous glass of the house red.
