"We had three portions of cochinillo (suckling pig). Two of them were amazing; however, the third was clearly not prepared at the same time. One of the special things about cochinillo is that it can be cut with a plate. Mine was cut and then baked. The crispiness of the skin was also noticeably different. You can see it clearly in the photos."
