Led by brothers José and Miguel Rausell, the third generation of their gastronomic family, this eponymous 75-year-old restaurant is a Valencian institution. It is split into three sections – a bar, a restaurant and an area dedicated to takeaway – each serving tapas, sandwiches and main dishes made from the very finest local produce, with a focus on seafood, meat and rice. The long, central bar is a hive of activity for lively conversations over good food and coffee or a glass of wine from one of 150 labels.

Patatas bravas is a simple and essential Spanish tapas dish that consists of roasted potatoes with garlic (aioli) sauce and a slightly spicy salsa made with Spanish smoked paprika. Cheap and heart-warmingly delicious, this seemingly uncomplicated tapa can be pretty mediocre at some places, so be sure to get some proper bravas at Rausell, one of the most emblematic tapas bars in Valencia (where they also make amazing Valencian rice dishes!). The brothers Miguel Ángel y José Antonio Rausell run this family company with a lot of pleasure and passion. This restaurant is very popular among well-known locals as Michelin star chef Richard Camarena (owner of Canalla Bistro), Carlos Boga (manager of Las Arenas Hotel) and Paco Solaz, who has a shop at Mercado Central.

With over 70 years of history, Rausell is a lovely traditional place that is on the top of the list of many local foodies. Situated just outside of the center of the busy Old Town, it’s visited mostly by locals ― it’s not a place for passers-by. The setting is a little more formal than most places, with tables covered with white linen (and no music), but the enjoyment of the guests makes up for that.

Bar Rausell has been a point of reference for gourmets in Valencia since 1948. Its traditional cooking is simple yet flavoursome, and never disappointing. We can recommend the paella, the arroz al horno (baked rice), the fideuà (a dish that is similar to paella but prepared with pasta instead of rice), the berenjenas rellenas (stuffed eggplants) and the croquettes.

Some other legendary bars in the history of Valèncian tapas are Rausell, Zacarías, Maipi, La Pilatera and Aquarium. However, check early or make a reservation if possible, as most of them are always full. It's for a reason, right?
