"Great experience of a new interpreted classic valencian flavors. Great technique, good wine selection by Hernan, who even adequately changed the maridaje to the drinking pace of my girlfriend.
The plates were intense in good flavors and also very balanced.
My favourite dishes were the Sepia y Calabaza with the (most amazing) caldo that the service team was pouring onto the when served. Such an aromatic harmony of savouriness, aromatics, sweetness and acidity. Would go again only for that.
Other favourites: Pato in two courses. The Guiso very earthy and innovative with the way the peanuts were altered through technique and also the esfericos made from rillete were contributing a lot to the depth of the dish. The Pato madurado was simplicity at its best for me. Texture and flavour altered by the Koji were simply working really well on the plate.

Cool idea with the torrija. Sacher was a cool balance of texture and flavors (ice cream simply delicious)
