Twice named the best pintxo bar in Spain, Sagartoki is the place to go to splash out, where innovation and flavours combine. It’s a space to experience the five senses, where chef Senén González has created a fine pintxo menu, featuring Mediterranean-style sushi, baby mushroom and truffle omelettes, and salmon and shrimp trawler.

Always buzzing, this is the place for pintxos, with posters and pictures on the walls advertising the many national and regional awards it has won. Through the back is a quieter restaurant serving simple, perfectly grilled slabs of meat and fish (c/ Prado, 18; 945 288676; sagartoki.com).

Ubicado en pleno centro de la ciudad encontramos Sagartoki que es otro de los restaurantes de Vitoria más conocidos y uno de los más especiales si quieres disfrutar de la gastronomía vasca, con un toque de vanguardia, que lo convierte en una experiencia única para comer o cenar. Con una carta bastante amplia, te recomendamos dejarte aconsejar por el personal, sin olvidarte de probar la tortilla baby campeona de España por 6 euros, la chistorra con lámina de patata por 8,50 euros, las Gildas por 2,50 euros, las croquetas de bacalao y partisano por 2,50 euros y el pintxo de patata y chistorra por 2,50 euros.

Sólo su pintxo de huevo frito con patatas o su afamada tortilla (la que lleva firmando Senén González desde hace años) bien merecen una visita. Pero a esto habría que añadir un variado abanico de elaboraciones, con los sabores de siempre por bandera, que han llevado a Sagartoki a atesorar un sinfín de premios. Desde los rulos mediterráneos (makis preparados con láminas vegetales que cuentan con diferentes rellenos) o las rabas de chipirón hasta las ostras o las gildas (no sólo la tradicional de anchoa y boquerón).

Passé la porte du restaurant Sagartoki, vous traversez une première pièce pour arriver dans une salle mi-indus mi-design, plongée dans l’intimité des lumières tamisés. Au menu : la fameuse omelette espagnole ou tortilla qui a été récompensée de multiples fois pour sa tortilla de patatas. Le tempura à l’artichaud et sauce pistache ne laissera lui aussi personne indifférent, tout comme une simple salade de tomates arrosé d’un trait d’huile d’olive, un délice.

My first port of call is Sagartoki, a former cider house turned restaurant, a warm, busy space where I can shed my raincoat and grab a table and consider my plan. This isn't quite the traditional venue it was in its cider-producing years: there's blue neon strip lighting behind the bar and bare bulbs hang with on-trend panache from the ceiling.

And outside the Old Town, on Prado Street, you will find the Sagartoki steakhouse. This eatery has won multiple awards, including the best pintxo bar in Spain, the best potato omelette and more. Its daring version of huevo con patatas (egg with potatoes) stands out: an egg hiding inside a sheet of dehydrated potato.
