In the 2023 MICHELIN Guide Thailand edition, two MICHELIN Stars listing remains the same with 6 entries – namely, Chef’s Table, Le Normandie by Alain Roux, Mezzaluna, R-Haan, Sorn, and Sühring. The one MICHELIN Star selection welcomes 5 new entries, all located in Bangkok, namely: Baan Tepa, a Thai contemporary restaurant offering beautifully presented tasting menu, made with seasonal ingredients sourced from sustainably minded producers and its backyard; Haoma, an Indian restaurant using sustainable, seasonal, local ingredients sourced from farmers, breeders, fisherfolk, and its own garden, to create delicious, beautifully plated Indian dishes in à la carte and seasonal tasting menus (including a vegetarian one).

When it comes to haute cuisine, the Japanese and the French are probably way ahead of everyone in the pack. The former champions fresh and seasonal produce, always prioritizing natural flavors in a meal, while the latter focuses on sophisticated tastes and intricate techniques. The MICHELIN Guide Thailand 2025 features 28 One Star restaurants, among which four accept online reservations via OpenRice. Additionally, four restaurants are first time promoted on the list, including AKKEE in Nonthaburi Province, near Bangkok (to be introduced later); AVANT, led by a Singaporean chef; GOAT, which combines Eastern and Western elements in Thai cuisine while using homemade spices and local ingredients; and Aulis in Phang Nga Province, which offers ‘the chef's table’ concept to create a multi-course tasting menu. Meanwhile, the modern Thai restaurant Coda has been promoted from a MICHELIN recommendation to a One Star Restaurant, as the inspectors were impressed by its simple presentation and the richness of its flavours!
