In a bucolic setting at Park Frankendael, a former country estate in Amsterdam’s Oost (East), De Kas pioneered “plant to plate” dining when it opened in 2001, and it now holds both red and green Michelin stars. The greenhouse and open-air gardens here and polder field close by produce around 300 different kinds of vegetables, herbs and fruit that shine in seasonal three- to five-course lunch menus and five- and six-course dinner menus inspired by the day’s harvest. Planning tip: Meat and seafood feature but above all this is a celebration of plants.

The daily changing prix-fixe dinner menu, with dishes chosen by the chef (vegetarians and vegans can be accommodated), always consists of five or six dishes (lunch is three or four). The wine selection is delightful, and they do a wonderful job with pairings.

I’m starting with restaurant de Kas because many people say that it was the inspiration behind the romantic dinner in Amsterdam scene in The Fault in Our Stars. Whatever isn’t grown onsite is grown or produced at a farm just a few miles away.

Every morning at sunrise, chefs and wait staff help owner and founder Gert Jan Hageman harvest herbs, vegetables and edible flowers. Ingredients are harvested in the restaurant's very own greenhouse and garden, situated in their backyard, as well as from a field about 10 kilometers (6.2 miles) from Amsterdam.

Because I didn’t have time to research much before our trip, I only discovered De Kas once I began to investigate things on the ground in Amsterdam. Luckily, lunch reservations are easy to secure and a meal during daylight hours was a boon for getting to shoot some images of this special place. He left moments before his restaurant's first Michelin star was announced to put his toddler in bed. Wim de Beer accepted the prize, but Timmer and his son returned and joined De Beer on stage about five minutes later.

Ik denk dat iedereen dit wel had verwacht, als er een groene Michelin-ster uitgereikt zou worden in Amsterdam dan zou De Kas de grote kanshebber zijn. En yes, het is uitgekomen en meer dan verdiend. Alles wat in de ochtend wordt geoogst, ligt bij De Kas tijdens de lunch en het diner op je bord. Alle ingrediënten komt uit de eigen kweekassen en dat is te proeven in de verfijnde gerechtjes. De gerechten worden aangevuld met vis of vlees maar de groenten zijn toch echt waar het om draait!

NOT dog friendly, but the humans say it worth having your pup nap at the hotel while you enjoy. this restaurant in a gorgeous greenhouse is on every foodies list. the humans were skeptical given how hyped up it was, but we had an excellent meal and would absolutely go back!.
