Fermented for at least 72 hours to create delicious flavour complexity, then blast-cooked to puffy, leopard-spotted perfection (in an imported wood-fired Gianni Acunto oven), Otto’s bases are thoughtfully topped with, for example, beef ragu, taleggio, braised red wine shallots and pecorino, or ‘nduja, honey and – Otto’s makes good use of British charcuterie, too – Wenlock Edge Farm chorizo.

Based in the heart of the Jewellery Quarter, Otto Pizza is topping my list due to its lovely wood fired pizzas, which are some of the finest on offer in the city. Having opened back in 2019, Otto use a range of independent Italian and British producers. Their Otto House Ham pizza is my particular favourite and one of the reasons it's sitting at number one It's served on thinly-sliced white mushroom and comes with mixed olive toppings.

You'll be hard pushed to find a pizzeria as wonderful as Otto down on Caroline Street in the Jewellery Quarter. Many try to take the crown, but Otto is almost completely unfaultable. Dusty-bottomed pies topped with gorgeous flavours, brilliant puddings and really, really special service that will warm you up faster than the wood-fired oven.
