Ellina is widely praised for its exceptional service, warm atmosphere, and exquisite Italian dishes, particularly the handmade pastas and unique taco offerings. The extensive wine list is a significant draw for connoisseurs. While some find the prices high, most agree the overall dining experience is well worth the splurge for a memorable meal in Aspen.

"Ellina: A Must-Visit in Aspen

Ellina is a true Aspen treasure! Owner and sommelier Jill brings unmatched passion and expertise to every detail, curating a phenomenal wine list that perfectly complements Chef Miguel’s extraordinary creations. The menu is a masterpiece, from indulgent handmade pastas to tender braised short rib and the vibrant, must-try taco menu.

The service is impeccable, the atmosphere warm and inviting, and every visit feels like a special occasion. Whether you’re a local or just visiting, Ellina is a dining experience you’ll never forget. Kudos to Jill, Chef Miguel, and their incredible team!"

Soffia Wardy

"One of the best experiences, if not the best in Aspen. From the ambiance, service and food everything was 5-star quality. Gavino was sweet and attentive. Jill was hospitable and impressive. All the food was spectacular and highly recommended to eat here. Order the Artichoke Heart Bruschetta or the Gruyère polenta croutons. They will change your life. The chicken Milanese was simple and elegant. Bolognese on point."

Brandon Rodriguez

"Had a lovely experience at Ellina. The ambiance and outdoor seating is comfortable and elegant. The staff was kind and attentive, and took special attention to make sure my food wasn't contaminated with gluten (I have celiacs, husband does not). The prosciutto and tuna tartar was great; husband had the black pepper fettuccini and French onion soup and said all was amazing. Thank you! Highly recommend."

The stone-walled downstairs dining room at Ellina feels like a cozy wine cave, with low lighting, white tablecloths, and, yes, lots of wine. There are a few dishes here that have remained crowd favorites since its opening 25 years ago (an eternity in Aspen time), like the lemony braised artichokes, crispy calamari fritti, and chicken Milanese topped with a tower of fresh arugula. There’s always a fun crowd hanging around the horseshoe-shaped bar, where you can order from the full dinner menu as well as a wine list with over 2,000 bottles.

Chef Miguel Diaz cut his culinary teeth in his grandmother’s Puerto Vallarta kitchen. Dashes of those Mexican roots meander their way onto Ellina’s modern Italian menu through a special taco lineup that showcases slow-braised short rib birria and crispy pork belly tacos with grilled pineapple salsa. The taco menu may tilt heads, but it somehow lives harmoniously with the truffled artichoke heart bruschetta and house-made mafaldine bolognese—smartly tied together by owner-sommelier Jill Carnevale’s award-grabbing, 2,500-bottle wine list.
