What Travellers Say
Reviews Summary
Ephemera offers an exceptional and highly recommended dining experience with creative, mind-blowing dishes and complex flavor profiles. Reviewers consistently praise the inventive menu, delicious food, and attentive service, particularly highlighting the chef's table. While the food is a clear standout, some diners note that the ambiance might not always match the high-concept cuisine, occasionally being impacted by music from downstairs.
"Our experience at Ephemera was truly exceptional, thanks to Chef Justin and Chef Josh who exceeded our expectations and provided a highly informative and enjoyable experience. As a chef, I asked numerous questions, which they readily answered, sharing their expertise while expertly preparing outstanding dishes.
We began with the Amuse-bouche of Grouper cheek cerviche, featuring a captivating twist with mango and takaziki, which proved delightfully light and playful.
Next, we savored the tempura Guinea Fowl with Maple-Bourbon Gravy, Black Currant, and chili peanut, a life-altering culinary experience. The tempura was perfectly crispy, while the black currant and chili peanut formed an extraordinary combination.
Our third course, a tagliatelle with Beet Arabiata, Black Cumin Chevre, Anise Raisin, and Pangrattato, was truly exceptional, and I intend to devote considerable effort to replicating this masterpiece. If you are in Colorado Springs, I highly recommend visiting this innovative eatery and opting for a seat at the bar, which serves as the chef's table! 😉
The drinks, the staff, service and the atmosphere are truly wonderful! 100/10 recommend!"

"We did the 5 course tasting menu and wine pairing. Overall the food tasted great and the staff were very knowledgeable about the menu and wines and very pleasant. The only downfall is that the atmosphere wasn’t quite as elevated as I would expect for this type of dining. Everything including staff attire and room decorations screamed casual, and worse of all the downstairs Coati was bumping club music which we listened to all night. We went on a late Saturday night so maybe other nights would be better with less club music."

"This is hands down the best I’ve been to in the springs in a while. And definitely one of the best meals I’ve had here. The flavor profiles of the food are complex and rich but also make a lot sense and they’re very enjoyable plates and portioned very well. I had the New York strip steak, it was incredible. the staff have amazing spirits and the atmosphere makes it easy to enjoy the food. Definitely recommending this place to my friends!!"

The colorfully tattooed Dedrickson started as a dishwasher, became a sous chef, opened IV with Brother Luck, and has built the city’s most fun and daring culinary team. Their edgy tasting menus, featuring artistically presented small plates like grouper ceviche, Guinea fowl, black squid ink pasta or duck mole, range from good to extraordinary.

You’ll find Ephemera beneath a greenhouse-style roof on the second floor of Coati, where a true exploration of seasonal and local ingredients awaits. Case in point: When we visited, the cocktail paired with the first course featured apricots plucked that afternoon from a tree just down the road.
