Although American wine making is usually associated with the valleys of California’s Wine Country, Texas is also home to a number of thriving vineyards. Cabernet Grill, with its impressive list of over 75 wines from across the state is one of the best places to sample the wares of Texas Wine Country. Based at the beautiful Cotton Gin Village bed and breakfast, Cabernet Grill boasts a stunning timber framed building complete with a picturesque patio, while executive chef Ross Burtwell cooks up Texas Hill Country inspired fare, such as the grilled Texas quail stuffed with jalapenos and wrapped in bacon, alongside his specialty seafood dishes like the green chili and crab stuffed shrimp with lemon cream and honey mango slaw.

If you want a Texas-sized meal in the heart of the Hill Country, the Cabernet Grill has just what you're looking for. Chef-owner Ross Burtwell uses local ingredients to inspire a menu that reflects the bold flavors of the Lone Star State. Menu items range from the popular Texas Twinkies starter—bacon-wrapped jalapeños stuffed with beer sausage and served with a jezebel dip—to the grilled Gulf shrimp with hatch chile corn grits and oven roasted tomatoes.

Some of my favorites include Cabernet Grill – I love the quail and their Texas wine menu; Vaudeville – great salads, quiche, fried chicken, and bellinis; Hill and Vine – the sausage and cheese board are excellent; and Woerner Warehouse – delicious chicken tortilla and spinach salad. You’ll find tasty German pancakes, egg dishes, fresh-baked pastries, and an excellent traditional German lunch menu if you can get into Old German Bakery (get there early). You can also find wonderful salads and sandwiches at Social Hauz.

With an elevated rusty style and an extensive wine list from the local wineries, the family-owned Cabernet Grill will provide you with a romantic ambiance and fresh flavors prepared by the Russell family. They specialize in flavorful American steak and seafood nicely curated to complement the Texas wine from the region. For a unique experience, we highly recommend the bacon-wrapped grilled Texas quail, stuffed with pulled pork, cream cheese, and candied jalapenos topped with a smoked strawberry glaze.

In Chef Ross Burtwell’s hands at the longtime Fredericksburg favourite Cabernet Grill, a lion’s mane mushroom, seared in a cast iron skillet with a wedge of charred lemon and topped with gorgonzola, is a fabulous dish, perfectly highlighting a superb ingredient with just one or two carefully selected ingredients. Plates like these, applying elevated technique to traditional ingredients and recipes, are emblematic of the sea change that is taking place in Fredericksburg restaurant kitchens.

There was a storm coming the night I set aside for Cabernet Grill, purple and ugly, with lightning rippling through the clouds, an early spring storm that dropped the temperature a good 20 degrees and resolved into a solid curtain of pea-size hail. Even so, the hosts engaged me and the party ahead of me in that awkward reservation dance of sending us to the bar to wait for our tables, a bar a couple of buildings away in a cheesy little village of stayover cabins.

I enjoyed a very good meal, the Oak Smoked Pork Tenderloin with Granny Smith apples, cranberries, dates and candied pecans topped with a bourbon demi-glace.

Perhaps the best meal of my visit came from a spot called Cabernet Grill. Full disclosure – it is literally 50 feet from the cabin where I’m staying and this meal (pictured below) was delivered to my front door.

Last but not least, we revisited a longtime fan favorite on Hwy 16 that we haven’t been to in years–the Cabernet Grill. Chef/owner Ross Burtwell is simply the best. The food was exquisite.
