Barn8 may be a bit of an outlier (both in terms of scope and geography), but it's still part of a larger local movement. While Louisville has its share of white-tablecloth places with old-fashioned service (and menu offerings to match), the energy in its increasingly eclectic culinary scene has begun to shift into unexpected places. Case in point is the casual corner bar in the laid-back Germantown neighborhood where industry veteran Chris Williams opened his lauded barbecue joint, Four Pegs Smokehouse & Bar, in 2019, parlaying the popularity of his Café 502 food truck into a thriving brick-and-mortar base.

There’s something so quintessentially Louisville about Four Pegs BBQ. Maybe it’s the history of the building, maybe it’s the excellent but accessible pub food, maybe it’s the fervent activism of its owner Chris Williams, or maybe it’s just the fact that it is a super friendly and unpretentious place. But trust me, these guys have every right to be pretentious about their high quality eats!. The Grippo Wings are a true standout thanks to their alarmingly deceptive appearance as just another fun potato-chip-crusted bar bite for stoners but instead, these wings are a culinary masterpiece.

The local brewpub offers bourbon-brined smoked turkey ($65), smoked turkey breast ($20 per pound), double-smoked hams ($70), and quarts of chili ($20). Four Pegs in Germantown is one of our favorite gastropubs in Louisville, and they also offer up a delicious weekend brunch!. Try the Chicken on a Biscuit, made with a cheddar biscuit topped with fried chicken, cheddar cheese, fried egg and a honey and hot sauce drizzle. Or the Chicken and Waffles, served on a dutch-style waffle with a sweet bourbon barrel Kentucky Beer Syrup™ sauce.

Located in Germantown, Four Pegs Smokehouse & Bar has been a go-to since it opened in 2018 with creative twists on BBQ dishes. Dig into their tender beef brisket sandwich, smoked low and slow, and served up on a fresh brioche bun with bourbon bacon jam. The brisket, chorizo, and pork belly burnt-end chili are worth the visit alone – with awards to prove it!

A building that’s been home to many different establishments, and since 2018 it has been transformed by the owner Chris Williams. He has made it into one of Louisville premiere gastropubs, creating a wide variety of foods for anyone who enters through Four Pegs’ doors. Another popular gastropub in Germantown, Four Pegs specializes in smoked wings, barbecue and all things grilled, tender and meaty. While the building has changed hands a few times, the original structure has served as an icon of the local community since 1876, making it one of the oldest Louisville restaurant buildings.

Four Pegs does well with the dry rub – the taste is off the charts. I love when you don’t have to add any sauce to the wings – that’s exactly what you get with Four Pegs. The owner Chris Williams was recently on Food Network’s “BBQ Brawl.

Owner, executive chef & pitmaster Chris Williams provides excellent food on his unique pub-style menu, along with daily events in a casual setting. Williams is an avid supporter of many local charitable organizations.

It isn't the best in town, but for a unique take, go to Four Pegs and get the Fried Chicken and Waffle Sandwich. It's a giant fried chicken breast between two waffles, with a mapley sauce.
