The duo behind the spot, Corrie and Shuai Wang, also pioneered an annual pop-up event called Ramen with Friends, which brings together top local chefs to create their own unique take on the dish.

One of the hottest restaurants in Charleston right now, head to the trendy Park Circle area to experience Jackrabbit Filly’s bold and vibrant Chinese-fusion flavors. If you’re in the mood for a sandwich, their creative market sandwich changes biweekly (think buttermilk fried catfish, soy-pickled okra and bibb lettuce with Creole mayo and Chinese takeout orange sauce on thick toast) and they offer a pork smash burger featuring local pork from Holy City Hogs.

Short Grain’s beloved karaage endures — the meat is juicy, the coating crunchy, and the drizzle of lemon mayo and ponzu, along with some togarashi-induced heat, should be presented with the following disclaimer: “The karaage is a small structure made of chicken. It is delicious, and you are not ready for it.” While no World Famous Jackrabbit Filly twist contest exists (yet), a similar, multi-tiered, two-foot tall trophy sounds about right.

The patio here on a summer night is Park Circle (North Charleston’s hip neighborhood) at its finest. The cocktails—perhaps a carafe of the sake-based If You’re a Bird, I’m a Bird—and easy-to-drink Lambrusco, chenin blanc, and rosé make for many gregarious rounds, and the dim sum brunch of dumplings, congee, and a big ol’ piece of chocolate chip banana bread is so popular it’s often standing-room only. No matter the occasion, at least one order of Sichuan hot karaage, drizzled with house “filly sauce” and served with sweet pickles, is a must.

The small storefront on Spruill Avenue is Shuai and Corrie Wang’s first brick-and-mortar operation (they now own King BBQ, too), and it delivers the bold flavors of a self-described New Chinese American cuisine. Savory pork dumplings and potato leek pierogies are followed by the ever-popular karaage (Japanese fried chicken) and Singapore fried rice studded with crab and ham.

Another hidden gem located outside of the downtown Charleston area, Jackrabbit Filly is led by a husband-and-wife team passionate about bringing New American Chinese cuisine to the Lowcountry foodscape. A casual establishment, Jackrabbit Filly maintains a lively indoor atmosphere and sunlit outdoor patio off of one of North Charleston’s main thoroughfares. As your server will happily explain, the menu is conducive for sharing, and it’s best to order two to three plates per diner.

The vintage-store tableware and primary colors of the booths and bar hint at a hipsterish experience, but Jackrabbit Filly is an authentic, heartfelt family enterprise. A husband and wife team (chef Shuai Wang and wife, Corrie) created a welcoming spot that blends Americana with large dashes of their Asian heritage. If you're going to try one dish, I suggest the karaage, a Japanese-style fried chicken that you'll wish was available in your neighborhood at home.

The restaurant is bringing back lunch, served Wednesday through Saturday. On Sunday, it will continue its dim sum brunch, but now with an even more traditional feel featuring authentic dim sum carts ordered from Beijing.

The family-style Jackrabbit Filly describes itself as a “Heritage Driven New Chinese American Restaurant” that serves food in a family-style setting. The restaurant has a Yelp rating of five out of five stars. “Everything is meant to be shared,” the restaurant said on its website.
