Boise A fun game to play with visiting Californians is to feed them tacos and get a kick out of their reactions. Prior to this July, one had to go all the way to Vancouver, Washington, to find tacos that would truly impress a SoCal sightseer. But now there’s Couve’s taco-and-queso powerhouse Little Conejo, also located in what’s all of a sudden one of the best food pods in Portland.

This Vancouver taqueria is one of the suburb’s culinary go-tos thanks to its standout oyster mushroom tacos, in which garlic-roasted mushrooms arrive blended with a touch of melted cheese that helps bring out their flavor. On the meaty side, Little Conejo makes some of the area’s better tacos al pastor, employing a trompo, or spit, to roast the meat. Other standouts include the thin-cut beef suadero with fried jalapeño salsa and the pescado frito, beautifully battered and fried mahi-mahi with crema and a pile of crunchy cabbage for textural variety.

Run by East Coast transplant Joey Chmiko, Little Conejo's next-door neighbor is a wood-fired pizzeria with an aesthetic so minimalist it feels like eating in an Apple commercial. The high ceilings and white walls decorated with only monochrome drawings by customers provide little distraction from the hulking hemispherical oven in the middle of the room and the chewy, charred pies Chmiko draws from its belly. The crust is tasty, if not always evenly cooked, and toppings tend toward bright Mediterranean flavors.

Little Conejo first opened its door in 2017 and has become one of the locals’ favorites for its amazing Mexican dishes served in a casual yet home-y ambiance. You can never go wrong with the Chile Relleno Tacos filled with crispy poblano peppers and queso fresco that adds a flavorful creamy taste. Or the Tacos Dorados filled with a potato and cheese mixture, then fried until nicely golden.

Vegetarians delight with tasty options like oyster mushroom and cheese tortas and tacos, comforting rice and beans, and an expanded dinner menu with taco options like carrot al pastor with crema and avocado salsa. Such a big fan, that I might have to say these are the absolute best tacos in Portland. The types rotate, but my favorites have been the lengua, suadero, lamb barbacoa, and pastor. They grind organic Mexican corn on a daily basis to make their own tortillas, and they are some of the best that I’ve had.

Details: There are over 100 mezcals to choose from at this joint known for piling the cotija high on each plate of tacos and tortas. Best bite: The tacos dorados, which features fried tortillas filled with potatoes and cheese then topped with shredded cabbage, onion, cilantro and housemade hot sauce.
