This makes extra sense when one considers that ceviche is a traditional Latin dish composed of raw seafood that’s diced small and then left to marinate in citrus and seasonings, with the citrus’ acid essentially “cooking” the fish and shellfish.

Beach vibes were high—and so were our spirits—as we embarked on our last adventures of the trip: an early dinner at the Panamanian restaurant Ceviche’s and a sunset boat cruise with Wrightsville Beach Scenic Tours. As we rode around the Intracoastal Waterway, I sipped a canned cocktail from our earlier visit to End of Days Distillery, felt the wind blow through my hair, and witnessed the sky change from fiery orange to a more docile periwinkle. Along the way, our captain pointed out various islands and birds.

Ceviche’s commitment to fresh and sustainable seafood takes center stage, with unique flavor combinations that will leave you surprised but satisfied. Order their Guac sampler (the seasonal goat cheese guac is out of this world), a ceviche (of course), and their coconut shrimp as appetizers, and don’t forget to try their refreshing house made juice, “Fresca de Ensalada.” Our favorite fish dish on the island is their “Corvina a la Plancha,” plated beside coconut rice and seasonal veggies.

Ceviche’s namesake is also bragged on for being the shining star, but the vibrant Caribbean-inspired tacos have without a doubt earned a spot on this stage. Early on in the day, start off with the Breakfast Tacos packed with scrambled eggs, salsa fresca, avocado, cheese, citrus cream, and your choice of bacon or chorizo. Step up your heat game at lunch with the Blackened Corvina Tacos exploding with tuna, pickled cabbage, jalapeno aioli, creamy avocado, and a sweet pineapple salsa.

Ceviche’s is a cozy Panamanian restaurant with the most charming outside courtyard. The menu changes frequently as they use the freshest ingredients. Menu favorites of mine include the Guacamole Sampler which features their regular guacamole, the G.O.A.T. guacamole (made with goat cheese, roasted tomato, green onion, and basil), and the season guacamole (made with roasted corn, roasted garlic, chopped scallions, poblano pepper, red onion, cilantro, and paprika).

Star of the show Ceviche’s was recommended by my aunt and uncle. We visited for the first time this summer, and we were blown away!. Quite possibly, Ceviche could be our new favorite dinner spot.
